They specialize in a local dish that consists of rice paper, rice noodles, a nice heap of mixed greens and herbs, and a side of boiled pork belly. You roll this all up together and dip it in fish sauce and voilà, a heavenly and beautifully balanced and absolutely scrumptious explosion happens in your mouth as you chew and slowly swallow what nature has given you.
They serve several other dishes and I had to try one of my favorites, a local field frog with rice noodles in a fabulous light curry broth which is found in this region, served with a plate of greens which you put in the soup and which makes the soup wonderfully fragrant and the frog meat was tender and juicy.
