I cannot recommend taking a class at Hashi Cooking more highly. Yesterday, I was fortunate enough to do the Ramen & Gyoza Class and I had an incredible time. Not only do you get taught the methodology and techniques behind the cooking, but Reiko went into great depth about the differences between the various ingredients and where to buy them, which I found very useful. Reiko then got us actively involved in the cooking which included making the noodles from scratch for the ramen, chopping the toppings and fillings for each dish and assembling the gyoza, and much more. Finally, once cooked, we then sat and ate our fresh, delicious food with an Asahi! It was lovely having Reiko join us for the food too, as we were able to ask questions not only about the food, but her life and Japan more broadly. For anyone with an interest in Japanese cuisine and cooking this is a must-do!

High five to Chef Reiko Hashimoto! We went for a Sushi & Sashimi class last year. It was a birthday gift for my partner. We loved it! Reiko is a brilliant teacher. Class is conducted at Reiko’s home kitchen which makes the experience more intimate and comfortable. She explains the steps and process very well, though be prepared to be put on the spot to display your culinary skills while the Chef will expect you to keep up with her pace 😄. You will leave the class having learned and practiced the basics, knowledge of important ingredients and what-not-to-dos. It is an intriguing 4 hour experience which ends in all students having lunch with Chef Reiko, each having their own hand made sushi & sashimi. Highly recommended!!

The Hashi Cooking 'Sushi & Sashimi' course that we attended was fantastic and hugely enjoyable, and Reiko is a highly-skilled, patient, knowledgeable and good-humoured teacher. My partner and I attended this course in August 2021 and had a great time getting very 'hands on' with making a wide range of tasty sushi and sashimi dishes, expertly guided by Reiko. We learned a host of new skills and it really inspired us to want to make sushi and sashimi at home (and made the idea a lot more accessible as something we COULD do!). I can't recommend this course enough - it was very educational and, most importantly, a LOT of fun. Brilliant!

I was bought a place the course with Hashi Cooking together with the Hashi cookbook as a Christmas present from my wife. We are both committed ‘foodies’ and enjoy exploring different cuisines from around the world. Whilst not being a chef, we are both trained professionals and have worked in the hospitality industry at senior management level. Previous to undertaking this course, my experience in Asian cooking has centred on Thai, Indonesian and some Korean dishes. However, I have always loved Japanese food and often choose to dine at Japanese restaurants when possible. Additionally, one of my hobbies is collecting cookbooks and have a wide selection covering many cuisines and standards from basic fast food/street food to Michelin Star standards. Reiko’s course has been developed using her extensive experience to deliver a fantastic adventure into Japanese home cooking. The dishes are full of flavour, well thought out and predominantly use ingredients that are easily obtained - mostly from local supermarkets, even in these challenging times of lockdown. Reiko is an excellent teacher who is able to impart information and get the best results from her students. She is calm and is able to call on her wealth of knowledge and experience when faced with problems such as students not having all the ingredients available. She is enthusiastic and clearly enjoys encouraging her students to develop their own skills further and not be afraid of adapting dishes to their own taste. I have enjoyed the initial course so much that I have enrolled on two more of Reiko’s courses and am really looking forward to further developing my skills and knowledge. The number of students Reiko accepts on a course is ideal as everyone has the opportunity to ask questions but is allowed to work at their own pace. Reiko clearly demonstrates what she is doing and why she is doing it together with explaining the aims and theory. I would love to undertake one of her ‘face to face’ private courses at her school some time. Overall, I cannot recommend Reiko’s Hashi Cooking highly enough. Anyone with an interest in food and cooking should give this a try, and I suspect that you will enjoy the journey and...

Following my successful ramen class, I took another online class with Reiko to learn a few different recipes from her excellent menu. We discussed the best menu to prepare based on my requests and she helped to fit things in and get a very good meal. The recipes are extremely clear, easy to follow and they work very well the first time. Reiko is very experienced and her online classes are really good; definitely worth the money! Japanese cooking is not particularly easy but Reiko makes it very easy (and yummy!); thank you Reiko!

In one word: delicious. I booked an online ramen class with Reiko; she'd mentioned that I'd be able to eat the outcome of the class and I have to admit that I was reluctant. We prepared both a vegetarian and a meat-based broth; then went on to cook the first during the class and kept the meat broth for another day. I was impressed with how good both versions were, really. Highly recommendable if you want to learn properly; the fact that it was online was not a problem at all. Also, but importantly, Reiko is a very nice person and enjoyed the time with her very much; I want to thank Reiko for such a good experience. I'm already browsing Reiko's website to look for...

No words can ever thank you enough for such an amazing experience. I went with my daughter for a daddy-daughter sushi making class. I knew it was a very special class the minute I walked in. The whole atmosphere was very professional. It was like being transported into an authentic Japanese house. We started our session with some background information on Japanese food traditions and then started moving on to food hygiene preparation etiquette and this all led to the whole experience being very authentic, my daughter couldn’t believe she actually left knowing how to make sushi professionally. After preparing all our sushi rolls with full guidance from Reiko, we were then invited to all sit down on a professionally laid out table with all our our sushi, Mizu soup, condiments, freshly grated Wasabi and some saki. When all this was done, we had a pleasant surprise of home-made Matcha ice cream ending the four hour session. Reiko give us a personalised gift, her first published book and some beginner sushi roll making kit which made us feel the money paid was well, well worth it.
