I finally had a king cake shipped out after visiting in January. As a fairly experienced baker and pastry chef, I was always very hesitant that a mail delivery product could compete with fresh baked king cakes I make each year. A friend has often ordered from another famous bakery and I was always disappointed in the quality.
The first thing that caught my attention with this one is the mouth-watering smell that immediately hit me m as soon as the box opened. Despite traveling from Louisiana to rural California, I had it in my kitchen less than 14 hrs after it left the bakery. The sweet, fluffy dough is a somewhere between best of a sweet, brioche meets croissant with the slightest hint of possibly nutmeg and cardamom. We chose the cream cheese filling which was delicious. We really want to try apple and lemon next! My personal belief is that frosting and sugar are only to hide poorly made baked goods when working with pastry dough. This item 100% stands on its own. The dough is definitely one of my favorites. That being said, the frosting fans in my house felt it was the perfect sweetness to highlight the flavors in the dough. Read moreNormally I would give this place 5 stars as I've been using them for various things since my early 20's so over 20 years...My cake was not ready at pickup and the decorator was busy "eating" upon my arrival.When questioned by counter help she told her to tell me to come back in an hour!What???!!No you get up off your wide butt and come finish my cake.Round trip I traveled well over 75 miles for this cake!She refused to get up where I summoned for the manager.The manager made her get up and do her job but not without me having to wait over 30 minutes.For all my troubles they took $5.00 off my over $50 order.Im hoping my cake turned out ok as far as taste but you can see visually that it was a rushed and not up to par for Maurice's decorated cake.Im sick and really just wanted to be home.Not a good day for a birthday....My order was supposed to be ready at noon and I showed at 12:35 because of unforeseen traffic.I did not get out of there till...
Read moreVisiting this pastry shop was a disappointment. Having “french pastries” in the name of the store sets expectations of refinement. I spent 30 min on Christmas Eve trying to find something to buy. It was a little disappointing that they didn’t have any buche, something you would find in any french pastry shop at this time of the year. The execution of the most basic french pasties like éclaire was sloppy. They had a lot of very American cakes you would never find in any french pastry shop. Eventually settled on what was sold as a kuglhehopf. It sort of looked like one but that was it. Instead of a dense yeast dough with hardly any sugar, cutting the cake revealed something closer to the very light and over sweet biscuit sold as angel food in grocery stores.
