Here's 1 thing to take to the bank: There's a ton of dummies like me who know nothing about olive oil, but want to feel like they're buying something authentic, good quality, and might even impress someone at a dinner party. Garbage grocery store oil is like 25 bucks, so make a 750ml bottle, 40 bucks ish, ready to go in limited quantites as the "I'm just looking for a decent olive oil" special or something to show them what they've been missing out on. There's so much knowledge and passion in this place but the sales process is painful. I left and came back an hour later when things were less busy, and it still took an hour front to end. I'm ok with this. But there will be a lot of others that won't. So, when the kitchen slows down - serve something that's ready to rock to buy yourself time.
