(Sortiraparis, 2023) “CHOISIR PLAQ C’EST FAIRE UN CHOIX ENGAGÉ POUR UN GOÛT, UNE ESTHÉTIQUE ET DES VALEURS FORTES” PLAQ proudly writes this on their website, but you might experience something way more interesting than that. This afternoon, as a chocolate enthusiast, I visited PLAQ with high expectations. However, what I encountered was far from what I anticipated. Upon taking the first few bites of the glace de noir, a large ice crystal hit my teeth—cold, hard, and utterly disruptive to the rich, smooth texture that one expects from high-quality smooth chocolate ice cream. Initially, I continued eating, hoping that the ice crystals were a one-off occurrence. Unfortunately, they persisted with almost every bite, completely breaking the experience with their watery, flavorless intrusion. This was not what I expected from a shop that claims to offer exceptional quality. When I brought this issue to the attention of the staff, the male employee dismissed my concerns, claiming that ice crystals are "normal" in every ice cream. This response was both surprising and disappointing, especially coming from a supposedly professional chocolatier. As I began the second scoop, the ice crystals continued, appearing every two or three bites, ruining the overall experience. The constant crunch of unmelted ice in what should have been a creamy, luxurious treat made it impossible to enjoy the true flavor of the chocolate. Feeling frustrated, I returned to the store and politely requested a refund. The same male employee responded with arrogance and impatience, implying that it was unreasonable to ask for a refund after consuming 3/4 of the ice cream. He finally conceded, slamming the 7 euros on the table with a clear signal for me to take the money and leave, while the other two female staff members stood by silently, observing. Later, I spoke with one of the younger female staff members (let’s call her Karen) as she was cleaning up. I asked if her colleague might have been having a bad day, as his behavior seemed unusually passive aggressive. She coldly brushed off my concerns, showing no interest in acknowledging the poor customer experience. Her demeanor was defensive and dismissive, further compounding my disappointment. Karen's attitude reminded me of previous encounters with her in this shop, which perfectly illustrated what micro-aggression looks like—a low-key, mean-spirited dismissal that makes one wonder if it was influenced by my appearance as a person of color. If the purpose of her behavior is effortlessly not hiding her dislikeness towards customers, I have to admit that she is successful in being mean as fitting herself into a very stereotypical younger French version of a Karen. To be honest, I’d be less surprised this type of micro aggression if I was in some random farm where Le Pen wins over other any other parties. Will I still be treated the same if I’m a bald old white French man? Her hostility was unmistakable, though subtly expressed, a stark contrast to the warmth she showed when interacting with her colleague, Caroline. Caroline, the only professional in the shop, eventually spoke with me and suggested that it was "bad luck" that I encountered the ice crystals and that the male staff member was only upset because I had been "insisting." I explained that I had continued eating only in the hope that the problem would subside, but Caroline’s comment about "bad luck" felt dismissive, sidestepping the real issue of product quality and customer service. It’s serious chocolate here, ladies and gentlemen :) The rocher coco choco was so crunchy and yet an unexpected piece of chocolate inside. The choux au chocolat is so generous and rich of chocolate mousse.

Every time in Paris I love going to PLAQ, but today’s visit has been a little disappointing. I had nice memories from the summer of 2021 when we had a wonderful chocolate ice cream there (I’m adding a photo for comparison). So, today I wanted to have just one scoop of ice cream again since the weather was nice and warm. I asked the shop assistant to give me one scoop, but she responded that they only do two scoops (why?). Strange, but I said ok, I’ll take two scoops (for 7.5 euros!). Sadly, what I discovered in my little pot had nothing to do with ice cream. It was just quite rich chocolate cream. I had a couple of spoons and returned to the shop to ask for a take away cup. I asked the girl who sold me the ice cream if it was well the ice cream that she gave me and she responded affirmatively. Well, I felt like it was “c’est n’est pas une pipe” experience when you know that something is clearly not what you are told it is. Obviously 4 hours later my “ice cream” pot i still has the same shape and form as when I bought it.(see the second photo) Do we agree the real ice cream would have melted? (So, perhaps it’s worth renaming the ice cream into chocolate cream not to mislead the customers and since it is soo rich, honestly one scoop is more than enough).

The team at Plaq is doing something different with chocolate than the traditional chocolatiers in Paris. They remind me of what Dandelion Chocolate in San Francisco are doing presenting the best characteristics the cacao from the farms that they source from. Each of the chocolates they present as products offer a distinct tasting experience showcasing not only the source cacao, but also a point-of-view from how they process it to their end product. They are producing easily at parity to the best modern chocolatiers of the world while putting forth their own distinct interpretation of excellence.

Beyond the chocolate products, their chocolate drinks and baked goods are far better than hyped tourist spots in Paris. I love that they offer their chocolate drinks made either with milk or with water, because each base presents a very different tasting experience. So get both to taste, compare, and enjoy!

Don't forget the baked goods. The black sesame chocolate cookie is excellent, but the piÚce de résistance is their chocolate cookie. The complexity and characteristics of the cacao used in this cookie stands out first and foremost. I have never had a baked chocolate good that puts the chocolate complexity front stage as Plaq does here.

If you're a local or visiting chocolate lover, Plaq HAS to be on your list. It's worth repeat visits to sample everything they offer—and definitely worth becoming a regular customer if you're local.




(edit to reply to PLAQ: If that was your dream and vision years back, congratulations, because you hit it out of the park. It's been fun bringing your products back and home for friends to sample. I love that your chocolate has your own voice in it. This new wave of chocolate making is doing for chocolate lovers what 3rd wave did for coffee. In our research, we didn't find anyone else in Paris doing what you're doing, so it seems you're a vanguard, too! Looking forward to dropping by in future...
