Mrs wanted vegetarian tonight, I wanted steak egg and chips. I'd seen maple and marble as an online presence before and as a bonus they were the only local butcher open on Sundays. I bought a scotch fillet and reverse seared it on my weber go anywhere with a rub of salt pepper and garlic powder. This turned out to be the perfect steak, cooked to around 127°F and rested before eating. It was delicious! No part of it was tough and it was pink but not bloody throughout. Will highly recommend this butcher! Honestly while finishing the steak it had a mouth feel similar to wagyu the quality was that good.
