First time stopping at Baumann’s even though we’ve lived in the area for Years. We decided to stop in on a lazy Saturday Afternoon. The warm welcome by the staff as we entered was a delightful surprise! We mentioned we had never been and the folks behind the counter were genuinely happy to answer any questions and show us around. They even offered hot samples of their famous smoked wings (Amazing! Giant wings-dry rub, slightly spicy but not hot) We couldn’t resist the beef jerky. Run don’t walk to get this jerky. It’s thick, tender, and tastes like a well seasoned steak. We picked up some pickles from a local business while there and some chicken gumbo from the case. Just with that impulsive stop, we are going to be dedicated customers.. friendly folks, honest prices, authentic little shop. The worst part is the access to the parking but don’t miss Baumanns!...

Staff couldn’t confidently answer key sourcing questions — breed, age or frame size at butchering, dry-age duration, butchering process in relation to cow stress reduction — and what they did say was vague or inconsistent. Claimed 45+ days dry-aged, but color, texture, and tenderness told a different story.
Marbling was weak across the board. Only one cut in the case looked decent, and even the fresh cut off the loin was disappointing. Fresh cuts were overly juicy, likely from vacuum-sealed wet aging, not proper dry age.
I still walked away with the three best-marbled strip steaks I could find, but frankly, this butcher does not meet the standard for serious steak buyers or those who’ve experienced true farm-to-table beef.

Read moreI returned to St Louis in September 2014 and was happy to find Baumann's again. Have gone in two or three times a month since returning. I have gotten spare ribs, baby back ribs, pork butt, bacon, andouille sausage, steaks, brisket, ground beef, beef jerky, smoked chicken wings by the pound, Bison burgers, and most recently a prime rib. All Excellent! The beef and pork/poultry rubs are a great standard by which you can judge your own efforts. Baumann's sauces are an excellent choice when your dish calls for wet, but the dry rubs are excellent. Elk, venison, and other game meats are available. A full range of wood for grilling and smoking provide you all the options you'll ever need. Top notch! Charlie...
