I visited Berkeley Springs with a friend, intending on visiting the spa. We had extra time and walked around town for a bit, eventually stumbling across Fleur de Lis Cheese Shop.
It's not every day that I stumble across an artisan cheese shop with a legit cheese monger who can pair you with all the cheese things you love. I love all cheeses, but tend to lean towards bloomy rinds and was paired up with Pipe Dreams -- a goat cheese with a bloomy veg ash rind. Lemony, chalky (not in a bad way), creamy smooth finish.
I STILL think of that cheese. I'm sure their offerings will change. and that specific cheese may not be in stock. But there would surely be others in the bloomy rind family just as exceptional.
