back in April I called crown butcher and needed supplies to make 40 pounds of hot Italian deer sausage and asked if they had hot Italian seasoning. Our butcher shop we used in holden,leroux's closed doors unfortunately. Spoke to a woman at crown butcher and she stated they did. Was surprised they had the seasoning i wanted being a Brazilian shop as well. I Was happy!. As i arrived on Wednesday they had my casings, pork trimmings and a spice concoction with a container all made. I asked what it was...definitely not the Italian seasoning, as she said they had the day before on the phone. she said....."its similar and as good". She stated they have another customer who makes venison sausage and uses these spices as well. i was in shock and speechless. she saw the look on my face and told me, it will b fine. definitely not the case when we made the sausage during the weekend. we tried a few patties on that Sunday on the stove and weren't satisfied. it was horrible!!. My friend mentioned, maybe being in the freezer it will quite possibly change the taste in due time?(my friend has been making venison sausage for 40 yrs plus, so figured id take his advice). So after I finished my last package of sausage from 2022 last week ,Tuesday I took out and unthawed a package we made back in april from the supplies at crown butcher. Fried a link that night and even made it in a few different sauces( a pasta sauce and even a sweet & sour)within a few days to experiment and try to save it and it was terrible!. The spice mix,she made was horrible!. Plain and simple. Multiple people tried it!.No luck. Was not happy!.I will never shop or recommend the crown butcher to anyone ever!. At Crown we bought the tri-tip steak. My husband is an amazing cook but this steak was pre-marinaded and we were delighted to find that it was stuffed with pancetta or ham and the flavor was something we’ve never tasted before! The ham gave fat to the lean meat and the taste was that of smoked meat when all we did was grill it! We seasoned, coated in spicy mustard, seasoned more and grilled.
