We went for drinks and food at 5 pm on Friday 15/3/24, during the Adelaide Festival and Fringe, so the bar was busy and noisy.
The kitchen and bar staff might have been rushed, but this doesn't excuse the olives on our platter swimming in brine and oil, and the rather crude piles of meats (pictured).
We had ordered Hungarian salami, but I don't think that this what we received, which was coarse and not tasty. We left most of it uneaten. A nearby group did have what looked like Hungarian salami, which is much more fine that what we received.
When I questioned this, the bar attendant went backstage to ask the chef, whose reply apparently was that we had received what we ordered. I am not happy that the chef did not ask to see it.
A little dish of mustard fruits in small pieces was good, but we weren't given any implements with which to pick them up to put on our bread. Ditto for having to dip our fingers into the olives' swimming pool to get them.

We hired the whole venue and we had Victoria Square as our view with the Xmas lights and decorations, which looked amazing. We were greeted with champagne and wines on arrival and were of a very good quality. The food was very nice and all canapes were served really well throughout the night. We got the situation that none of the bar was available in 5 star hotel. Luckily, Ivy had sorted it out for a large groups. Ivy and her staff are so passionate and knowledgeable with their craft which is reflected in their work, down to the details and aesthetic of the venue.
We all thoroughly loved the taste and education behind each cocktail.
If you respect mixology, or simply love a great cocktail, this truly is a must-visit for any local or traveller, there's nothing else close to the Collins in this city, likely even all of Australia.
