Hieu and Tram are an absolutely gorgeous young vietnamese couple who have combined simple flavours to stunning effect. Every dish we tried tonight, was out of this world. Perfectly cooked, beautifully seasoned, and done in such a way that let the lovely Fully Fresh ingredients speak for themselves.
My wife and I have been disappointed time and again by restaurants here that smell amazing as you walk past, but something always let's you down. Not Original Saigon. Located right across Ruthven street in Nth Toowoomba from the mill precinct, just down from the Bunnings, the first thing you notice is the glorious smell of Eastern food, and it only gets better.
Hieu is the perfect host. He is charming and wonderfully genuine, and makes sure to pass on your thoughts to his wife Tram in the kitchen. Saigon Is a delightful little restaurant, with a sweetly comforting ambience at perfect odds to put you at ease after the rush of the world outside.
The food is prepared perfectly and with barely a wait. As I said before, we sampled 5 different dishes tonight, and all were just exceptional.
If you are looking for a taste of the orient that is fresh, healthy, and exceptional value, you Have to try Original Saigon. The most expensive dish was $15 and all portions are filling but not overly so. Lovingly prepared, like a vietnamese home cooked meal by Tram, it's a treat for your taste buds.

On the second occasion I had the beef noodles. The best thing I can sat was the beef was velveted correctly but it was all down hill from there. The noodles were a single cake of dried wheat noodles that had just been reconstituted, along with a small quantity of vegetables, velveted meat, sugar, a small amount of flavouring, maybe MSG, and stir fried for maybe 30 seconds with no evidence of wok hei. Ingredient costs would be about $1, the portion was very small, noodles were barely reconstituted and starting to release starch, vegetables were almost raw and the whole meal was barely warm rather than hot because it was barely cooked, and no chef technqiue was evident . I have made similar quick-and-dirty noodle meals hundreds of times, but I know this is cutting all corners and is certainly something I would never serve to guests. I phoned the owner and asked if the meal had been microwaved, and assured me it had not, and said there had been no complaints. Beautiful crispy rolls with herbs, fabulous meat and veg, and great salads. However, as the year went on the quality declined, and into this year it has also. Unfortunately, I will not dine in or order from Tram anymore. I have not received a Banh Mi that is crispy, or filled with herbs and balanced flavours, since the middle of 2023. I understand when going through delivery that crispiness can disappear, but it seems that hot dog rolls are sometimes used too, and the same quality is received when I have dined in.
