I really wanted to love Fuel Bakery, but based on my experience, I wasn’t impressed. Maybe it’s because I’ve had much better quality pastries and can easily tell the difference between a great croissant and an average one. With all the raving reviews on Google, I’m honestly not sure if people haven’t tried truly good pastries before or if they’re just easily impressed. The croissant wasn’t as flaky or crispy as expected; it leaned more towards the soft side. It looked pretty, but that’s about it—lacking the rich buttery flavor I was hoping for. The Danish pastries were much the same. I had high expectations, but overall, it was just average. It wasn’t bad, and I’ve had worse, but it’s definitely mid-tier and not what I’d consider high-end, especially by Sydney standards.

very good local bakery. Got the chocolate custard pain suisse and the seasonal fruit tart (mine had blueberries + pistachio). both were flaky as, super buttery, and didn’t feel overly sweet or heavy. The layers on the danish were very texturally pleasing on every bite. Also noticed they’ve got a massive range of sourdoughs: rye, white, wholemeal, spelt, multigrain, etc. Didn’t try the bread this time but it all looked proper rustic. Bit of a line when I went, but it moved quickly and the cabinet was still well stocked around mid-morning. Will definitely be back to try more, keen to see how their croissants or baguettes hold up.

I was quite disappointed with the level of customer service during my recent visit. After assisting another customer who was having difficulty being understood due to his accent, we found ourselves standing there waiting to be served. Despite the previous customer leaving, the staff member turned her back on us and proceeded to have a personal conversation with another employee while drinking her beverage.

There was no acknowledgement of our presence for several minutes. It wasn't until we began to walk away that she finally addressed us with a “Can I help you, ladies?” — at which point I replied, “Too late,” and we left.

This experience reflected a lack of basic customer service etiquette and awareness. Unfortunately, it left a very poor impression, and I hope management provides further training to ensure customers feel welcomed and respected...
