I visited this amazing ramen store a few years ago and ever since I have been chomping at the bit to get back and do a review on what I consider the most authentic pork ramen this side of the equator! On a cold and stormy Sunday my dining partner and I headed to China Town in Sydney. Walking down Dixon St we avoided the tourist traps selling overpriced peaking duck and other Asian fare and headed straight to where the locals go... the Eating World Food Court. While it might feel like a less fancy option than the restaurants on Dixon St it is all the traditional food, with the same or better quality and at a fraction of the price! At the far end of the food court, tucked away in an unassuming corner is the Gumshara Ramen Store. This is a real, fair dinkum ramen shop that makes the traditional pork broth from boiling up the pork bones and extracting the rich, thick and delicious bone marrow. They even close between lunch and dinner each and every day to cook up a fresh batch of soup base. Gumshara only prepare pork ramen. Because of this focus their ramen is on point and probably the most authentic you will find in Sydney. They have two styles of pork soup one lighter but still full of flavour and a thick soup that coats the inside of your mouth and is super rich and hearty. If you are a fan of meaty pork and that classic umami flavour then you need to try one of their offerings! I went for the ultimate in ramen pleasures, the Super Mega Ramen Noodle Soup. This dish is true to its name and at $30 a serve is worth every dollar. This hefty bowl of pork gluttony packs a lot into the bowl. You get the standard noodles, spring onions and marrow soup with seaweed garnish but the pork is loaded into this dish in three different and tantalising ways. There are the slices of pork that circumnavigate the bowl, a huge slab of BBQ pork sparerib and a BBQ fatty pork skewer!! If I haven’t painted a good enough picture for you then let me back up the description by saying just how deliciously perfect this bowl of pork really is. ITS REALLY GOOD!! Everything is cooked to perfecting and the pork is just amazing, full of flavour and a fantastic messy journey into pork perfection! I am a big eater and I couldn’t finish my serving. I probably didn’t need the addition of the second perfectly cooked runny egg but how could I resist, amazing! The store provides a number of house made condiments to go with your meal and it is worth trying the pickled ginger and garlic toppings. I washed the meal down with a Fuji Apple soft drink which was quite good considering there wasn’t a nice Japanese beer available in the food court. Totally worth the money defiantly worth trying if you are ever near China Town.

Fabulous. I eat and cook a lot of pork. This is the real deal. No punches pulled on the flavour and richness. Not for the (pork fat) feint hearted or the menu modification crowd. Eaten here many times, but it has been a few years. I think they have gotten even better, or I just really needed ramen. I respect that they control entry to ensure quality and service speed. The cookery is exemplary. The simplicity of the broth that is rich and creamy is only achieved by a long slow cook and quality ingredients. The pork cuts are perfectly cooked. The condiments and add ins are excellent. Japanese kimchi, pickled cabbage chilli side delicious. A-class noodles. Perfect bounce, flavoursome. This is serious cooking and dedication to a dish and a just few variations that you just don’t see often enough. I love that you return the tray when finished, as a perfectly satiated guest it feels like the least I can do. The hospitality world has it tough, I have the utmost respect that the team here run a tight and efficient ship, they explain the process and rules/way things work. I will gladly oblige for such delicious and well cooked food. It is some of the best food I have eaten in a restaurant. (A well travelled chef myself, so I don’t offer that compliment lightly.) Congratulations on keeping small enough to hold to such a high standard. I have tried to get back my last few visits to Sydney, but it didn’t happen, to have such a delicious, soul warming meal, that hit all the right spots this evening was just what I needed. There was a small queue at 5pm, the place is obviously popular. I posted a review which I don’t do that often, in the hope other real cooks and eaters might read it and decide to go. This place deserves to be successful and remain so. You should think about eating here as being as (or more) interesting, delicious and special as the glitzy hatted restaurants with harbour views. Thank you team. 🙏🥰😍🍜🍜🇯🇵🇦🇺

This place definitely has the feel and look of an Authentic Japanese Ramen shop as if you were in Osaka, Kyoto etc. Definitely has the lines and wait times as well. For some the wait may be a deal breaker, for others it'll be worth it. For us the wait was fine. Pork ramen is the main and only attraction here. If you don't like or can't have pork then I'd say look elsewhere. For everyone else bottoms up! Service was attentive and friendly. You are greeted outside with a menu as you wait and are asked how many to be seated. As seats free up your party will be allowed in and given a table. You order at the counter and ask for any extra toppings and you can even ask for them to be on the side of it like. You're given a number and once it's called, your hot freshly made ramen is ready to collect. The self service counter is where you get your cutlery and other condiments for your ramen bowl yourself. BBQ pork ramen is an easy recommendation as it's a lot easier to eat than the in bone pork rib ramen I went with. Large is very large and the price makes sense for the amount of noodles, broth and pork you get with your serving. The regular might be a safer option for you if you can't that much. Broth was thick and full of umami. Easy enough to drink the whole lot. The pork rib was fatty, crispy and very meaty. One criticism would be leaving it bone in made it much more difficult to eat and enjoy. Really wanted the rib to absorb the broth but that would have spilled it all over myself. The egg was perfectly cooked and very flavourful. Overall a great bowl of ramen that definitely leaves you full to the brim when you're done with your bowl. Is it the best bowl of ramen in Sydney? For me no but that might change with another visit in the future. If you haven't been to Japan and eaten at a ramen shop there then this is the closest you'll get to it while here in Sydney. Definitely give it a go if you're in the area.

Gumshara, tucked away in Sydney's bustling Chinatown, is a haven for pork lovers and ramen enthusiasts alike. The unassuming exterior and communal seating may seem unconventional at first, but the tantalizing aromas wafting from the kitchen quickly dispel any doubts. Before you even taste the ramen, the ordering process itself is part of the Gumshara experience. First, secure a seat – you'll notice seasoned regulars marking their territory with jackets or bags while they wait in line. Once seated, make your way to the ordering window, where a friendly staff member will take your order and payment. Be sure to remember your number, as this is how your delicious bowl of ramen will find its way back to you. Now, the main event: Gumshara's mega ramen. The star of the show is undoubtedly the broth, a rich and fatty concoction made from over 300kg of pork bones simmered daily. This luscious elixir coats each strand of the springy noodles, creating a harmonious blend of textures and tastes. The bowl is generously adorned with tender BBQ pork slices, each bite bursting with savory, porky goodness. A fatty pork skewer adds an extra layer of indulgence, while a perfectly cooked soft-boiled egg with a gooey yolk provides a welcome respite from the richness of the meat. Don't worry if you find the broth too intense – extra stock is available to dilute it to your liking. To complete your ramen adventure, explore the vast array of condiments and toppings on offer. From spicy chili oil to fresh green onions, you can personalize your bowl to suit your taste buds. Just be prepared for a truly satisfying feast – Gumshara's mega ramen is not for the faint of heart, but it's a culinary experience you won't soon forget.

We traveled to Sydney CBD for personal matters but stopped there at Gumshara to try their ramen the first time for lunch, through news on social media App. Waited outside for around 20+ minutes and got get in. Ordered pork spare ribs & bbq pork ramen noodles at the kitchen counter (with thinner soup and less salt requested), spent $60 for 2 bowls (cash). Got a ticket number. Then we’re asked by kitchen staff to return the bowl, cutleries and tray to a trolley station after eating. Pros: 1. Great news about their reopening and the traditional way of doing business. 2. Pork ribs are delicious, bbq pork is tender, soup is nice. Cons: 1. A bit pricy. 2. Narrow walkways and stools (not chairs) are not for parents with prams and kids (easy to fall), also not suitable for wheelchair users. Circled area (in photo) is the only possible spot for a pram. 3. The trolley station is located close to the dining area, but due to the packed area, it’s not their problem, but still need to tidy up and clean more frequently. The trays are not clean either. 4. Self serving (from ordering, food taking and utensils returning) can definitely save a serving staff, but it requires the customer’s skilful manoeuvre through the narrow walkways (3 times altogether), and it is definitely a bit risky. 5. Even though we ordered thinner soup and less salt, it’s still a bit salty for senior people like us who are nearly 70 (both of us don’t want to eat our dinner, don’t know how and why)! 6. 3% card surcharge makes more customers feel like to pay cash, so need to bring cash. Conclusion: Worth a bit wait and try their cult ramen soup as a start. Wish they can earn enough money to get a more spacious place in the future.
