You know a good baker from the length of the queue outside their doors (and the queues where there long before Covid happened). This shop is the second outpost in Brussels of Christian Pelej's imaginative, divine and delicious stone oven bread. Rated in the top 10 in Brussels/Belgium this is my go-to-baker (something we should all have in our lives!). However, the shop is messy and a bit stressy which detracts from the experience of trying new breads. Noting is gluten free but some bio. Try the Almond Croissants, the focaccia and the house stable: Cannabis Bread (named from the floor motif not the ingredient). Expect to pay $$$

Their bread is also excellent, my favourite is the multi-cereals one. The cereals are really tasty and don't just decorate! Finally I'd say even though the classic pain au chocolat or the croissant are not outstanding like the bread and the baguette, you should try and taste the other "pleasures" they have like the biloute, brownies, with a special love for the almond one. Ps: when it's not too crowded it's also enjoyable to just see and enjoy a coffee there.

The baked good are truly great - the best baguette I’ve had in Brussels so far. Airy, crispy and delicious. Prices are also very reasonable. Great place to come for baguettes, sweets and croissants. This is a great bakery with terrible customers. Every weekend, you'll be standing in a line for 40 minutes before eventually giving up. What's going on, you wonder? Is it technical malfunction? Could it be problem with payments? I'll relive you of this mystery burden. Once you come inside you'll see people standing at the cash register and staring blindly in front of them. They create an illusion of thinking but that would be a premature analogy. My theory postulates an evolutionary glitch. Their ancestors from the early bronze age didn't frequent supermarmarkets. So when they finally come to a cash register, their occipital parts of the brain go, "Oh, wait, what is this place?" And that's why you'll be waiting outside. The UN should pass an addendum to the Human Right Convention stating, "All human beings have right to reasonable market exchanges. If you as a customer haven't made up your mind, step aside until you are ready to articulate your order succinctly and coherently. If necessary, practice in front of a mirror." The bakery still deserves 5 stars nonetheless. I have deep compassion for workers who have to witness this...

Artisanal bakery, very good in general. The bread is definitely their strong point, it is mostly amazing (sicilien, cannabis)! Love the baguette! The croissants and pains aux chocolat are very tasty although a bit too greasy for my personal liking. Pastries are good but a lot of sugar, great for very sweet tooths!

The part which makes the whole experience less fun is the waiting and the service... The line is always super long and it takes FOREVER until it is your turn... Count minimum waiting time of 20-30 min when there is a line... Terrible...

With Covid you would think the staff would wear masks when making and serving the food they serve you... But apparently the owner is an "anarchist" (says so proudly himself), so abiding to rules is not his thing.

Staff has a lot of turnover, and the atelier also always seems messy (perhaps too small like someone commented earlier). Doesn't always convince me with regards to hygienic...

Les produits sont excellents. Mais il y a un bémol : Le problème est le manque d'attention vers le client à cause d'une organisation désordonnée.

  1. nous avons commandé le pain A, et le pain B et à leur question du style "autre chose?" nous avons ensuite demandé le croissant Y et la baguette X.

  2. Le monsieur qui nous "servait" voulait aussi faire deux choses en même temps : s'occuper de moi mais aussi couper le pain pour les autres clients .

  3. Le résultats a été deux fois le même problème : il manque un produit. En rentrant à la maison chaque fois nous avons retrouvé un produit de moins. Il est resté quelque part dans la confusion entre le coupe-pain , le moment d'encaisser, et le moment pour donner les sachets avec les produits vendus . Ce même problème s'est produit deux fois dans des jours différents.

  4. nous habitons à l'autre bout de la ville et, chaque fois, je n'ai pas envie de refaire le chemin en voiture pour discuter avec les gérants au sujet un sachet "perdu" ou "manquant".

  5. nous ne doutons pas de la bonne foi des gérants. Ma perte est de quelques pièces d'euros pour le montant équivalent des sachets "égarés".

Toutefois il y a deux possibilités pour éviter ce genre de problèmes dans le futur :

-ou l'employé reste concentré à 100% sur un seul client et il le sert (choisir et sortir le pain et prendre en main le pain, le mettre dans un sachet, encaisser, dire au revoir) jusqu'au moment où ce même client ne sort du magasin .

ou bien le client doit se concentrer lui-même sur un seul achat, par exemple rentrer et commander deux baguettes seulement et prendre un seul sachet et payer. N'acheter rien d'autre.Faute de mieux, la seule stratégie est celle d'éviter d'acheter plusieurs produits à la fois (baguette , croissant, pistolet, brioche, pain A et pain B er pain de type Y) .Ainsi en achetant une seule catégorie de produits (par exemple deux baguettes) il sera plus difficile de perdre qqc dans toute la confusion des files d'attente et on évitera des oublis de l'employé qui a l'ambition de vouloir s'occuper de plusieurs clients en même temps.

Il y a aussi l'option de recruter un troisième employé qui s'occupera aussi de la clientèle dans les jours où le magasin est visité par de longues files d'attente...
