I'll admit I was famished. I would have eaten a cold hotdog in a stale bun. But I know well-prepared food. I can rank my four best meals ever. Two have been in Four Seasons Restaurants. The very best was in Toronto. Third was in New York City, and fourth was at an Italian restaurant in Kansas City called Jaspers. This meal placed second in my 62 years. It was a blackened Red Snapper with an orange beurre blanc sauce over a mango corn salsa. A picture is attached. The fish had a lightly crisped crust, was flavored with a tinge more spice than my wife's meal, and it melted in my mouth with a flurry of garden fresh flavors that would have made any artist blush. Chris, the chef, could read our faces. Words were not going to do justice, despite our efforts. It was like trying to describe DeBussy's Clair de Lune. You have to hear it to truly appreciate it. And it was guilt-free. All within legal bounds of our diet. Bravo Maestro!
Now, I can only thank God that they don't have a wine list with a 2010 Corton Charlemagne white burgundy on the menu, because that would have paled Handel's Messiah, ruined my diet, and my budget. My advise to you is to get to Coconut Cafe and experience the genius of this young man before either Leo DiCaprio or Francis Ford Coppola makes one of his Belize trips, visits the Cafe, and steals this man away as his private chef.

I recently visited Coconut Cafe, and it exceeded all my expectations! This isnât just a cafe; itâs a place where you want to spend the entire evening enjoying the atmosphere, delicious food, and exceptional service.

The owner, Chris is one of the coolest, most down to earth folks you could meet. His passion for food, good vibes and music is evident. We came with a large group of people (50 adults and over 30 children) and not only was Chris so kind to accommodate all of us, he even set up a space for us to jam to some music and sing for two nights of our stay on the island. The servers Gil and Lisa are the friendliest and most attentive! Gil makes wicked cocktails and Lisaâs presence is like a big warm hug. The food - well, itâs absolutely phenomenal!
