I recently had the pleasure of celebrating my bachelor party dinner at Vargas, a top-notch steak restaurant located in the vibrant city of Montreal, Canada. I couldn't have asked for a more perfect venue to mark this important occasion. From the moment my brother reserved a table for us, to the incredible food and exceptional staff, our experience at Vargas was absolutely unforgettable.

First and foremost, I must mention the incredible food at Vargas. The restaurant is renowned for its perfectly cooked steaks that are a carnivore's dream come true. Each cut of meat was succulent, tender, and bursting with flavor, ensuring that every bite was a pure delight. The menu also offers a range of delectable appetizers, sides, and desserts that perfectly complemented our main course. Every dish showcased the culinary expertise and attention to detail of the chefs at Vargas. It was truly a feast fit for a bachelor party.

I recently had the pleasure of dining at Vargas Restaurant in Montreal, a gem that should be on every food lover's must-visit list. From the warm and welcoming ambiance to the attentive service and exquisite dishes, my experience at Vargas was nothing short of exceptional.

Upon entering the restaurant, I was greeted by the delightful aroma of sizzling steaks and the soft, ambient lighting that created a cozy and inviting atmosphere. The elegant, yet understated decor added to the overall charm, making it the perfect setting for a memorable evening.

My server, Pascal, was the epitome of professionalism and courtesy. From the moment I was seated, he made sure that I was well taken care of, making excellent recommendations and ensuring that I had everything I needed for a perfect dining experience.

The main event of the evening was the 9 oz Eye of the Rib, cooked to perfection. The steak was tender, juicy, and bursting with flavors that danced on my palate. The accompanying plain mashed potatoes were creamy and smooth, providing the perfect balance to the rich and savory flavors of the steak.

To complement my meal, I enjoyed a glass of the 6 oz Mondavi Woodbridge Merlot wine. This beautifully balanced wine had a delightful bouquet of dark berries, plums, and subtle hints of oak. We came to this steakhouse when we visited Montreal over the Patriots' Day long-weekend. It wasn't too far from the hotel we stayed at, so we thought we'd give it a try.

It was not busy at all when we got there, & our server said that there were only 3 of them working that night because it wasn't busy. However, as the night went on, more patrons came.

We got there at around 8PM & our server took our order at 8:15PM. We ordered 5 items: Poseidon's Tower (which had half lobster tails, shrimps, oysters, marinated octopus, cherry stone clams and salmon gravlax) PRIME RIB AU JUS | VARGAS CUT 12oz 18oz BONE-IN RIB EYE SAUTÉED MUSHROOMS KUNG FU FRIES (fries topped with Gojujang mayo, green shallots, sesame, Sriracha)

We placed all items together. Our server assured us that he'd gauge the timing so that our steaks will come out after we finish our starter. The Poseidon's Tower came out about 30 minutes after. The clams were a bit chewy, but the rest of the seafood was good.

What made us upset is the fact that we had waited a total of 1.5 hours from when we placed our order, for the rest of our food to us. The other guests (group of 3) that sat beside us who got their after us GOT their food BEFORE we did! Another table close to us started getting their foods before we did too. I had to go talk to the server to ask about our main!! He didn't even give us any updates as to how much longer it'd take until I went to ask him. It was almost 9:45PM when we got our main. It seems they were not attentive to their guests & they just didn't communicate with the kitchen staff. We are aware of the other reviews about how slow they can get, but didn't realize it'd actually take that long to get our food. Had we known it'd be that slow, we would have gone elsewhere. Review of customer experience. It was 10 pm on a Sat. Called in to make sure they would still serve us if we arrived at 10:15. I asked if this was OK, and the response was blunt and had no sense of hospitality. I was told I better know what I want to order because the kitchen closes at 10:30pm. We were on our way there, so making changes in our plans after that interaction wasn't a big deal, nor did I read into it any further. We arrived, and i recognized the maitre d was the same person I spoke to over the phone. She mentioned that the only available table is the bar. We complied, but as we walked into the dining room, I noticed that at least 80% of the tables were empty. So I asked why can't we sit at an open table. I was told they couldn't. I found this bizarre, so I continued to point out that there are plenty of tables empty. This forces the maitre d to begrudgingly walk away to the front to try and see what they can do. A server who was in the vicinity that heard our conversation chimed in and mentioned they are not allowed to seat people in the open tables, and they've gotten in trouble for it before. Again, I found this odd, so I mentioned that it seems like an internal issue trying to insinuate that customer experience should be prioritized. She was very nice and showed sincerity about our situation, but it boggled my mind how adhering to internal processes was more important than creating a positive customer experience, especially for the money this restaurant demands for its menu. The maitre d comes back and seats us at a table. Our server was very nice and upbeat. Also assured us we didn't have to rush out as the restaurant stays open later than the kitchen. The remainder of the night was good. Much like the other reviews, I found the food to be ok. It was good, but it did'nt leave a strong impression. I think for the price range, there may be better options.

For our first trip to Montreal, we went to Vargas expecting to try the best of Montreal steak and fine dining. Boy were we sorely disappointed, not only for the higher price we paid, the food quality is just sub par. We started with the Vargas VIP platter, which I can sum up as just a very very mediocre beef satay, calamari, dumpling, roasted vegetables...home cook ingredients that doesn't befit a gourmet meal. The sauces paired are just plain and reminds me of watered down version of the real chili/satay peanut sauce. At least they tried incorporating Asian cuisine in their westernized way (0.5 star) Onto the main courses, we ordered the NY sirloin, lamb chop and steak. It took almost an hour for the entrees to arrive. Both steaks and lamb chop are not very memorable (the fact that the sides are priced separately and comes in separate plating makes the lone steak on the plate look bare), taste bland with no hint of spices, and they don't even serve it with any sauce at all. You know the steaks are sub-par when the roasted potatoes and garlic mash stole the star of the entrees. (0.5 star) As for the sushi, reminds me of the sushi you find in gas stations. I can get better sushi off from T&T for way less. So much for the expensive price tag and pretentious upscale vibe, the food is really mediocre and ruined our Montreal foodie experience. Should have stick with The Keg, at least they are consistently good. I will still give two stars for the service. Despite the sad food and the fact they didn't have our tables ready when we arrived with reservation, our server is attentive and polite. (1 star) Service - 7/10 Decor - 8/10 Presentation - 2/10 Food - 2/10 I would NOT recommend going to Vargas for any meal, you will find better at a food court or walk a few blocks to The Keg for a much better steak meal.

I ordered a Captain Morgan and Diet Coke and the waiter asked me multiple times what kind of spiced rum I wanted, after repeating that I wanted Captain Morgan. It was not a language barrier either. The biggest disappointment was the Prime Rib Au Jus. It was SO overly salty. I ordered it medium rare, and it came out first in our order, the underside was cooked much more than the top side and must have sat on a hot plate waiting for the rest of the order to come out to the table. I couldn’t even eat half of it because it was so tough, I couldn’t even cut through much of the steak with a steak knife. Very disappointing as I was really looking forward to an amazing tender steak. When I told the waiter about my disappointment in the steak, he didn’t say anything! Not even an apology or an offer to get me something else to eat or to take a little bit of the cost off of the check. Just…. Silence. I left more than half my meal on the table, and I always take home leftovers. I agree with a lot of the reviews. Some things are amazing and others just a disappointment.
