I write this review a couple hours after finishing the meal service, second day in 2025, still a bit in awe. Typically get my sushi fix in Japan yearly, with a trip soon planned for this year, I was under no expectation that a hole the wall restaurant in Cochrane, Alberta, of all places would serve me kinki straight from Hokkaido. If Alberta end up having Michelin stars one day, this place will have it. Its quality rivals some of the best omakase I've enjoyed over the years across Tokyo, Kansai and Kyushu. In my opinion, this is not only the best sushi restaurant in Alberta, but all of Canada.

The premium omakase considering its repertoire of ingredients, is a very reasonable price at $200. Not only does it include the aforementioned kinki, other Hokkaido region delicates such as uni and scallop also grace the table. Other regional specialties such as the A5 Miyasaki wagyu and Okinawa mozuku. Together, the omakase experience was a symphony of local delicacies from all over Japan. The chef almost came across as a master chef hiding in the mountains, half way across the world, to serve Canadian locals some of the best Japan has to offer. In addition to the above amazing dishes, some of my favorite selections included the mini chirashi, a beautiful fushion of otoro and chutoro, and the always appreciated botan ebi with the fried head. Furthermore, the amadai was such a delight, with its edible scale that added a fantastic texture to the expertly cooked fish. The Miyasaki wagyu paired with a beautifully seared cod, under some smokey flavour, was not only presented magically, but also tasted like a one-two punch palette pleaser.

It is such a pleasure that I have found this place in my backyard. I will for sure be a regular for as long as...

April 16, 2023 Enjoyed Azito's fabulous omakase dinner last weekend with the family. Absolutely breathtaking 9 course dinner with some of the best quality and unusual seafood that I've had in a long time, anywhere!

  1. Appetizer platter: marinated baby fire squid, tempura noodlefish,deep fried salmon belly and marinated shrimp & squid.
  2. Shrimp, scallop & ikura chawanmushi (steamed egg). It was light, smooth and delicious.
  3. Sashimi platter - beautifully presented with saba, madai, sablefish (black cod), salmon, Hokkaido scallop, akami, chutoro, hamachi, and botan ebi (Pacific spot prawn) with deep fried prawn head.
  4. Hokkaido scallop, uni and chutoro with quail egg yolk seasoned rice. Server mixed it up at the table.
  5. Wagyu nabe- with shiitake mushroom, Napa cabbage and tofu in a shoyu broth
  6. Shrimp and scallop katsu skewer
  7. Seared sablefish in ponzu sauce
  8. Smoked nigiri platter - spectacularly presented hickory smoked sablefish, chutoro and wagyu (cooked) nigiri
  9. Basque burnt cheesecake cake ALL the food was delicious! Service was excellent: friendly & courteous, with a smile. There is only one server, but our beverage glasses were always kept full. The tea service was so cute! The dining room is clean and spacious. There is a large open kitchen. Be prepared to spend a minimum 2-1/2 hours for this service. Omakase is offered only certain days of the week and must reserve well ahead of time. Price likely in the area of $150 per person. Uncertain because this dinner was a gift. Please check with restaurant. It was a most memorable gastronomic experience. I look forward to returning to taste their regular menu. I highly recommended...

We went to this amazing little place in Cochrane Azito. I have been wanting to try their creations for 2 weeks, trying to get reservation is almost impossible. This place is very small and only 5 small tables. They take quality seriously so that is why they have staggering reservations. Cause the chef wants to focus on one table at a time. Everything he does is thought out and made fresh daily. They do not use the same fish the next day. So, when I got the reservation I had to order the food 24 hours in advance and reservations can only be made by via Email. Dates are extremely limited as they only open 5 days a week only 2 lunch days are open for 2 hours only and the rest are open for 4 hours only for evenings. Time slots are hard to obtain. Expect emails going back and forth for awhile before scoring a reservation. This quaint restaurant serves some amazing food. The Ebi Mayo was so amazing with battered tiger prawn, lychee, Pistachios and their house sweet mayo. 😋. Their Goma-ae is made with organic kale then the traditional spinach. The seafood sunomono was fresh, tangy and sweet. The Aburi wagu beef with foie gras and a Tempura prawn in the middle was so delicious you do not need soy sauce! The Honey Teriyaki chicken roll in soy sheet was good and their Green special roll in soy sheet with fried zucchini on top and inside has Brussel sprouts, avocado, house blend vegetables and fruit sauce! Sharing this meal with a dear companion—seeing genuine delight—made the evening even more meaningful. The restaurant’s owner greeted us warmly and shared stories about their craft. Their dedication to maintaining a small, high‑quality establishment shines through in every detail. Fresh ingredients arrive from Japan every Thursday, and it’s clear they continually refine their recipes to achieve the very best flavors. One highlight was the recommended Tenbi (“heavenly beauty”) sake—its aroma rivaled a fine wine and elevated the tasting journey. Each small course invited slow, mindful savoring, and the two‑hour progression felt unhurried and perfectly balanced. The nigiri sushi, served just before dessert, was a sublime finale: each piece revealed deeper nuances the more I savored it. Azito’s commitment to excellence and its intimate, story‑filled atmosphere make it not only a standout dining destination but also a prime candidate for a Michelin Guide evaluation in my humble opinion. It is pricey but worth it. I will defintely come back. I can’t recommend it highly enough!
