The Restaurant: Tillie's: This beachfront restaurant serves up delectable Caribbean-inspired cuisine. The fresh seafood and vibrant flavors are a must-try. I want to shout out the Pastry Chef Julian and Tim for setting this up, and for taking my wife and I to the local farmers market. That was such a cool experience because we too are farmers back home in Maryland, USA so tasting and seeing what the locals grew and ate was fire. The food at Tillie's is impeccable, I mean truly words cannot describe it, you can truly taste the LOVE in the food. We got a chance to attend “The Suppers Club” which is an evening of entertainment, and a freaking 7-course delicious meal. That was my first time trying Oysters and I can honestly admit I ordered more later in our stay, it was too damn good, especially with the sauce that's accompanied to intensify the flavors of so already fresh-tasting oysters. I just cannot eat it anywhere else because Im sure they won't be as good as Tillies. Our favorite dish to eat is Tillie's cheeseburger (get double cheese) it's sooo beefy and gooey and delicious that goes perfectly with Tillie's french fries which are PERFECTION, they are crisp and thinly cut. We also enjoy the fish sandwich with that delicious homemade tarter sauce, the grill bowls they offer at lunch, you can't go wrong, and of course, the star, that grilled red snapper fish that's perfectly seasoned, smokey, salty butterflied goodness! No matter if you ordering room service or eating in person, they are consistent in the quality of care made in the dishes and service. We cannot leave this section without mentioning Giuseppe our waiter extraordinaire. His presence brightens our day. He's consistent in the quality of care he provides and just knows what to say. His insight and knowledge of the menu is impeccable. His outstanding quality of service is unmatched. We did have other waiters who were also amazing, I want to shout out Chege, he is considerate, thoughtful, and genuinely a nice person. Shout out to Girlie and her partner who works in the kitchen, they were so nice. One evening I wasn't feeling well and they personally delivered my meal to my room to ensure I was well taken care of. That personal touch cannot be taught. Shout out to my hostess with the mostest Ella!! Her warmth and courtesy brighten my day whether it's already good or a little tinted. I also loved the fact that they actually remember my wife and I, including our names. Goes to show how magnificent of staff they are. ITs the little things that makes the experience that much more enjoyable. Chef!! Keep doing what y'all do, because the food is unbeatable. I wish there was a restaurant in the DC/MD/VA area back in the States that I could frequent (hint..hint…)
Overall: My second visit to Palm Heights confirmed that it's one of the best hotels in Grand Cayman. Read moreHard to find, really expensive, worth it all !!!! It took us two phone calls and driving up and down Seven Mile Beach to find it. There is no signage for either the restaurant or the hotel that it is embedded in. The entrance to the drive is obscured by palm trees. There is no parking. A valet takes you car and parks it across the street. The only way that we found it, was that we were directed by a security guard at a complex across the busy street. Once you got there, the ambiance was fantastic.
To get to the restaurant, you walk down a tunnel of shade trees, tropical flowering shrubs and vines to the beach. The beach is staged with potted palms and colorful umbrellas and deck chairs. This is no ordinary beach or ordinary resort. Turn left at the outdoor bar that is always alive and busy. Then you enter a tropical paradise of serenity with tables on the beach under umbrellas. That is Tillie's.
Gowned hostesses greet you and direct you to your chosen table. A waiter in proper attire comes to the table with a platter of chilled towels to freshen you for the meal. The cocktails are unique and delicious. I wanted to order the steak and frites, but I was afraid that the steak would be tough. I should not have been afraid. The food was cooked to perfection. I ordered the burger and fries. I have eaten heavenly fries from Belgium fried in beef tallow and horse fat that were the best that I have ever had. The fries at Tillie's were better. They were the best that I have ever eaten. My partner had a snapper bowl. The flavours were out of this world. The food was some of the best that we have ever tasted. The ambiance was magnificent. The wait staff were attentive and wonderful.
The dessert was the crowning achievement. We shared the Baked Alaska. It came to the table on a trolley. Burning rum was poured from a cruet to make the flambé meringue on the exterior. The interior was a mix of guava ice cream, and lemon flecked vanilla ice cream. Again, one of the best things that I have ever put in my mouth.

I have dined in some of the other popular Cayman restaurants such as Calypso, Peppers, Morgans, and more so I was curious how this restaurant could exceed my expectations. When my family and I first arrived, the atmosphere was tranquil due to it being placed right by the beach with a garden aesthetic. The servers wore white tuxedos with bow ties so we immediately realized that this was a high end restaurant. The ambience of the restaurant was peaceful, elegant, and welcoming. When the bread and drinks came, I thought the bread was decent but the Piña colada tasted okay and the portion was one fourth of the other places. When our appetizers arrived which was the conch fritters and coconut shrimp it was okay for what it was but it was not nearly as good as Calypsos, Peppers, or Morgans. We were hoping that the entrees would make up for it. Then we began waiting with empty drinks for a while and beginning to feel like we had to chase our server for refills, not to mention the water was hot due to the restaurant not having ice. When our entrees finally came out and I took the first bite of my octopus and Mac n cheese, the food tasted like DISSAPOINTMENT. The serving size was also very small as they only gave me one single tentacle covered in sauce and the Mac n cheese was said to be “Large” but it was a normal size as any other. At the end of our dining experience the check for 2 breads, 1 conch fritters, 1 coconut shrimp, 1 octopus with Mac n cheese, 1 filet mignon with broccoli, 1 snapper with mashed potatoes along with 3 Piña coladas came to be nearly $600.
