The broth was fantastic, striking a perfect balance with its depth of flavor while maintaining the clean, clear profile characteristic of the “tannrei kei” (淡麗系) style, distinct from heavier tonkotsu or miso ramens. It brought back fond memories of home in Tokyo, where shoyu ramen reigns supreme.
The ajitama(seasoned egg) was a standout; perfectly cooked and bursting with flavor, leaving nothing to be desired. However, the chashu was a slight letdown. While flavorful, it was stone cold and could have been more tender, which detracted from the overall experience. The ramen noodles themselves were excellent, maintaining a chewy, al dente texture that hit all the right notes.

We ordered the AKA Kanzan Marinated Pork Ramen, and to accompany it, we chose Beef Tongue. What stood out was the fact that we could try two different varieties of Beef Tongue, both of which were incredibly flavorful and tangy.

Went in at around 9pm, while I understand they close at 10pm and the last order is at 930pm, the members of staff kept spying on me to check if i have finished my meal. They abruptly asked me to pay the bill first in a stern manner when I have a mouthful of noodles (the time was around 9:20pm, no where near their closing time.)
