Amazing new restaurant opened in Sushi Anabas old location by some of the chef who has also worked for Anaba in the past. They bring in a very well thought out mating of the French and Japanese cuisine that you don’t get anywhere else in Copenhagen. I was sceptical of the repurposing of my favourite Sushi Anaba space for a "French / Japanese" restaurant, but shouldn't have been. This feels more like a French restaurant would be in the midst of Japan: Japanese ideas and techniques with some French ingredients. For some of the courses, it even felt like the now-closed "Amass" restaurant. Excellent wine...
