Without question this is the best boulangerie in Nice, if not in the south of France. Okay, maybe the croissants are the best in the entire country. Iâm not joking - Monsieur Roy takes pride in creating baked goods in the traditional manner and his efforts make for an array of superior baked goods. Madame Roy is equally well suited at the front of house, always kind and knowledgeable as she creates a heartwarming experience. Itâs a joy to buy from this establishment. So flaky (I mean, look at those layers), but also soft and light as air. The pain au chocolat and the pistachio pastry are absolutely transcendent. Came here every day and was lucky enough to get still warm baguettes! They were super light and crispy on the outside and soft with a beautiful open crumb on the inside. The last day of our trip, we went to the bakery before opening and waited outside because I really wanted to buy a few baguettes and croissants before our flight.
