We were very excited to visit the Influence restaurant and before reserving the table I have checked the menu online and we were impressed by some dishes that we saw there. However, when we got there the menu was slightly different as well as some things on the menu that is already having so few options were missing that was first disappointing. Second the amuse-bouche, the was super bad, that was truffle cream that made both me and my boyfriend so sick and we only tried it and didn't finish. Second both starters were impressive and delicious and very unique. The second dishes were both bad, my boyfriend asked for a raw steak and it was well cooked, for a person from Florence is a really big disappointment. I ordered risotto that I had only one bite because it has no taste at all, scallops tasted like pieces of plastic. Our waiter asked me if I didnt like it and I said not at all. But I am not that type of person who creates fights and argue at restaurants but as a person who has been working in hospitality for over 3 years I I was shocked my behavior of restaurant staff. The waited offered us the dessert and we thought that was in the restaurant at least, however it was in our bill. We have been to many restaurants in Nice and surprisingly the Influence was really bad for us and we have paid 150 euros. I have never felt so sorry for spending this much money on all this bad food. We are not people who normally complain but as I mentioned before, I know exactly what the restaurant server was incorrect by not giving us discount or free dessert ( that he has offered to us) He also didn't apologize for this mistake. So far the worst experience in nice at the restaurant where we had the highest expectations. Never back again. P.S. the rose wine was great Hate to write bad review, but it's necessary for this place to think of how the waiter should behave in this situations.
Answer to the owner: I am not sure you understood what table was us, the table next to us had some issues and I saw the owner talking to them, so probably you think that that's them who wrote the review. We arrived at 9pm and didn't say that meal was excellent we said it wasn't good and your service staff said oh sorry let me offer you a dessert. No one came to talk to us that night, do definitely you mistaken us with another table. We had no language barrier because we were speaking English and Italian to the waiter who spoke these languages too.

Influence is tucked away from all.the tourist trappings and is a beautifully appointed little foodie oasis. We settled in w the best st Germain and aperol spritzes after we were warmly greeted by our host. We chose the 5 course menu which included an amouse bouche of guacamole topped with a spiced crab Mico green and lemon pearls. Then a courgette beignet w a yogurt type sauce w micro beets and marinated courgettes w a bowl of cucumber gazpacho which was incredible. Main was a seabream w a pomegranate citrus sauce, polenta and a puree of aubergine. All the flavors here married together to create the lightest and most delicious main dish. The cheese course was one of my favorites and thay says alot, as the this is the land of cheese. The dessert was a poached peach with a lemon verbena sorbet and a puff pastry w a sweetened ricotta. The entire meal, was a whirl of sweet, and savory, with a touch of citrus, which was designed like a food masterpiece to create a tasting menu that was so amazing we even went back to for our final night. We didnt want to be disappointed with our last dining experience in nice so we booked influence again for our last dinner. This is a very lovely, intimate restaurant and you have the choice of a four- or six-course set menu with three or four wine glasses to pair (or you can just order drinks as you please). We went with the six courses and the three glasses of wine to pair, plus a cocktail to start. The food was great, with some adventurous dishes. Standout dishes for us were their signature foie gras and the vemicelli broth. I was pleased we went with the six courses because although the meat course wasn't as stand out as those two, it was still exceptional. The wine pairing was excellent which introduced us to some new wines. My only criticism of the place is the lighting: it was very bright, and I think they could improve the ambience by turning the lighting down just a tad. So they lose a star for atmosphere for that. Having said, that, the service was excellent and although it seemed to be only a two-man team, everything ran like clockwork and we were really appreciative of the waiter taking the time to explain dishes to us in English.
