We enjoyed all our dumplings but need to call out the steamed Black Pearls ie Har gau is on point and must have! Dan Dan noodles is not so traditional but the creamy peanut sauce with al Dante noodles made it impossible to stop slurping up every bit of the dish. The only dish we didn’t care for is the porc bau… was bland and can definitely give it a miss. You cannot leave without ordering the black sesame mochi.. served warmed and made it the perfect ending to the meal. Will definitely be back! I went here for a work lunch. This restaurant is situated in one of the cutest streets in Paris and the good thing is you can make a reservation in the restaurant 😍 The cuisine served here is from Hong-Kong. Good vegetarian options as well and the food quality and atmosphere are top notch!! I also tried a cocktail here and it was really refreshing!! The service is really good as well!

I went here for a work lunch. ⭐⭐⭐⭐⭐ Exceptional dining experience at Steam Bar! This was my second visit to Steam Bar and I’m thoroughly impressed once again. The restaurant has managed to maintain its exceptional standards while keeping the menu fresh and exciting. The creative dumplings are truly the star here - each one showcases a beautiful fusion of traditional techniques with elegant French influences that you simply won’t find elsewhere in Paris. The presentation is artful and the flavors are perfectly balanced. What I love most is how they’ve managed to honor classic dim sum while adding their own sophisticated twist. The atmosphere strikes the perfect balance between intimate and lively. The warm lighting and thoughtful design create such a cozy vibe that makes you want to linger over your meal. Despite being busy, the service was attentive and knowledgeable - the staff clearly takes pride in what they’re serving. Yes, it’s on the pricier side, but the quality of ingredients, creativity of the dishes, and overall experience absolutely justify the cost. This isn’t just a meal, it’s a culinary journey that showcases real artistry in the kitchen. The fact that they’ve changed their menu since my first visit shows their commitment to innovation, yet the consistent quality proves they haven’t lost sight of what makes them special. J'ai démarré par les raviolis "Black Pearl" (gambas, gingembre, basilic thaï, bouillon crémeux au sésame). Ils sont très dérouant, probablement en grande partie pour leur couleur noir, avec le moelleux de la pâte, on aurait presque l'impression de mâcher un champignon noir. En tout cas, il y a du travail dans le ces raviolis. La pièce coûte 4 euros mais oui, ça en vaut la peine quand on voit le résultat. La pâte est un travail d'orfèvre par sa finesse, son moelleux, et s'adapte bien avec les gros morceaux de gambas tendres mais légèrement plus fermes qui amènent de la texture et de la mâche à ce raviolis plus que troublant qui ne peut laisser indifférent. Ajoutez à cela le goût du sésame qui arrive en fin de bouche avec sa note salée, c'est un délice et une très intéressante découverte que je n'oublierai pas de si tôt.

M'a ensuite été servi le pain vapeur que j'attendais particulièrement en tant que grand fan des baozi. Il s'agissait du bao "Beijing" (canard laqué, miso, yuzu, écorce de mandarine séchée), à 8 euros le bao... Là en revanche, 8 euros, cela m'a paru bien cher... Certes, la pâte de à bao était excellente ! Ultra moelleuse, fine, bien aérée, goûteuse, légère... Je ne vois vraiment pas comment mieux faire. Par contre, j'ai été déçu par la farce où l'acidité et l'amertume du yuzu, de l'écorce de mandarine et du miso masquaient complètement le goût du canard laqué. C'était extrêmement frustrant, moi qui adore le canard laqué et que j'espérais retrouvé comme élément principal de la farce en terme de saveur. Du coup, l'on s'éloignait beaucoup de l'appellation "Beijing" en terme de goût. C'est dommage que le côté fusion ait cette fois-ci gâché le savoir-faire technique que l'on ne peut que saluer.

Puis, j'ai goûté aux gyoza dits "Kanako" (magret de canard, poulet, carotte, gingembre) à presque 3 euros la pièce. Là se trouve pour moi le meilleur rapport qualité/prix de la partie salée. En effet, non seulement c'est moins cher mais c'est très bon, une de mes préférences dans les dim sum. Déjà esthétiquement, c'est beau. Les raviolis sont bien disposés, brillants, avec ces graines de sésames grillés sur le dessus qui ont aussi bien un intérêt pour le décor que pour l'ajout de texture. C'est discret mais, mine de rien, cela contribue grandement au plaisir de la dégustation. Et puis la volaille en plus, les légumes, plus ou moins classique (plus ou moins dans le sens où je n'avais jamais vu du canard avec du poulet même si c'est la même famille si on puit dire) mais un juste accord des saveurs et très très bon ! Les gyoza sont poêlés juste comme il faut.

Enfin, j'ai terminé sur les bouchées intitulées "Little Hanoï" (siu mai bœuf, cannelle, anis, coriandre thaï) à un peu plus de 2 euros la pièce. Certes, c'est le moins cher mais je suis resté un peu sur ma faim en terme de saveur. Je l'ai trouvé agréable à la mâche de par sa cuisson parfaite où la viande hachée en boule était ferme sans l'être trop sous une pâte extérieure extrêmement fine et soyeuse. Je n'aurais pas exigé mieux. C'est dommage qu'il m'a manqué d'assaisonnement ou de prise de risque pour le goût, le goût des épices étant un peu trop discret pour ma part.

Passons au dessert, j'ai choisi celui qui est nommé "La dame de Shanghai" qui est une religieuse marron litchi. J'appréhendais beaucoup l'association marron et litchi. Mais en tant qu'amateur de pâtisserie, la religieuse m'inspirait particulièrement sur la carte, je voulais constater le travail de la pâte à chou. Très agréable surprise, cette dame de Shanghai est une merveille, mon coup de coeur du dîner finalement ! Non seulement le travail de la pâte à chou est nickel, bien cuite et soufflé avec de l'élasticité, sans oublier le craquelin dessus pour le côté croquant, mais l'association marron/litchi, en fin de compte, fonctionne du tonnerre ! Je n'aurais jamais pensé à cette association mais l'idée est géniale ! Le côté sucré du litchi convient parfaitement à la petite...
