Restaurant Nose & Belly — Restaurant in Augsburg

As a background, I have tried the two others one-star restaurant in Augsburg and I was eager to try our new addition.

Let's start with the highlights: the ingredients were great, the preparation was perfect, the plating was beautiful ("the inverted egg) and the service was really friendly and polite.

It felt like fine dining, even if one could find improvement in the service. We enjoyed it very much as it was. Something to note is that water (still and sparkling) doesn't cost extra, very enjoyable and fair.

Now to the possible improvements (you can't really call them lowlights):

For a restaurant called Nose & Belly, our nose was not really challenged. I was expecting something surprising and inventive in the direction, such as smelling something special before taking a bite to change our perception of the aromas. Not quite sure what is possible, but engaging our nose more would be a clear distinctive feature of this restaurant. The food was inventive, balanced and elegant. Maybe a little too much in the delicate direction for my personal tastes. I was expecting bolder dish that would surprise me more.

But not to give the impression that we didn't enjoy our evening, it was great and we will surely comeback... especially so, if the restaurant find ways to distinguish itself better from the fine...

My visit to Nose & Belly in Augsburg was truly exceptional, with the service, food, and wine all deserving of high praise. The quality of the cuisine was superb, and every penny spent felt entirely justified.

While I would gladly give this restaurant a full 5 stars, I must deduct a point due to a few service-related observations, which, though minor, are noteworthy in the context of fine dining:

The absence of the waiter placing the napkin on my lap was a small but expected detail in fine dining. Upon arrival, we found ourselves seating ourselves and moving our own chairs, which, in upscale establishments, is typically handled by the staff, particularly for female guests. While the waiter initially refilled our water glasses, this attentive service seemed to wane as our meal progressed. There were extended periods during which we had to refill our glasses ourselves, and a fresh water bottle was not brought to our table. These are admittedly minor points, but in the realm of fine dining, attention to such details is often what sets an experience apart. Nonetheless, the overall quality of the restaurant, from the cuisine to the ambiance, remains highly commendable, and I would certainly recommend Nose & Belly to those seeking an exceptional dining experience...

Gestern waren wir im Nose & Belly in der Heilig-Kreuz-Str. 10.

Dort gibt es, neben vielen einzelnen Gerichten auch ein offizielles 7-Gänge Menü für 120 EUR - und bevor die ersten deswegen gleich in Schnappatmung fallen es waren unterm Strich 12 Gänge mit den Grüßen aus der Küche usw. und das was man für das Geld bekommt reißt einen vom Hocker.

Ich finde, man sieht deutlich die Handschrift der Sterneküche wie von Wissler bei dem der Inhaber und Koch bereits gekocht hat. Jeder einzelne Gang ist eine geschickte Kombination von mehreren klaren Geschmachsrichtungen die in sich stimmig und perfekt ausgewogen kommen. Und trotzdem explodiert jeder Gang wie eine Bombe am Gaumen. Das war wirklich ein echtes Erlebnis und wenn man noch die Weinbegleitung dazu nimmt kommt dazu auch noch diese Abrundung. Da waren Weine dabei, die ich alleine nicht runter bekommen würde aber in Kombination mit dem jeweiligen Gang ist das die Perfektion.

Dazu gibt es zu jedem Gang auch eine Geschichte - da war zum Beispiel das Senfei, das er als Kind gerne mochte und dann schaut man seinen Teller an und findet ein Senfei - aber in einer Perfektion wie ich sie bisher nur in Sterne-Restaurants gesehen habe. Die Bilder auf der Homepage sprechen wirklich das aus was einen im Restaurant erwartet.

Das wirklich einzige was man vielleicht noch machen könnte wäre die Erklärung wie z.B. "nehmen Sie es gerne in die Hand" aber das traue ich mich eigentlich fast nicht schreiben.

Das war seit langem mal wieder ein Restaurant das mich wirklich restlos begeistert hat, vom Brotaufstrich bis zur Herzlichkeit der Mutter die als Kellnerin hervorragenden...
