Brauerei Spezial is nothing short of a Bamberg treasure. Steeped in centuries of history – brewing since 1536 – this place embodies the very essence of Franconian tradition. From the moment you step inside, you’re struck by its authentic charm: a beautifully preserved interior that feels both rustic and welcoming, filled with the warmth of Bavarian culture.
The food is absolutely exquisite. We tried the Schäufele (roast pork shoulder with crackling), served with the traditional potato dumpling and sauerkraut, and it was simply perfection – tender, full of flavour, with a crispy skin that was pure delight. The schnitzel, golden and perfectly fried, paired with crispy fries, was just as impressive. This is traditional German cuisine at its finest, executed with care and authenticity.
An interesting detail: the menu is only in German, which makes the experience feel even more genuine, though the staff speak English and are happy to help guide you through the choices. It’s all part of what makes this brewery-restaurant so unique – you truly feel immersed in local life.

Read moreWe stayed here three nights in March 2024, a group of nine, and were pleased they were able to accommodate us in single/double rooms as needed. I had fairly low expectations of the rooms as it clearly states it is a brewery with rooms, not a hotel, but I was very pleasantly surprised. My room (a double for single occupancy) was on the 2nd floor - lots of stairs, no lift - and was very large. There was a small window onto the courtyard, a desk and chair, and two armchairs and coffee table. The bed was large and comfortable and there was plenty of storage space for clothes. The shower room was small, but the shower was good. A hairdrier is provided (no tea/coffee facilities as expected), and shampoo/shower gel is available. Breakfast was served in a room opposite the bar, good continental style with fruit, yoghurt, cheeses and ham etc., and a boiled egg made to order, tea/coffee/juices etc. The bar is busy from mid-morning, we just managed to book a table for dinner on arrival but if you're planning to eat in the evening, it's best to make a reservation in advance. This original brewhaus dates to 1536 and the Merz family has kept its traditions since the late 1800's. Our room was on the upper floor overlooking the courtyard and was spacious, clean and modern. The breakfast was excellent with a perfectly timed soft boiled egg served on order. If you want a true local culture experience, this is probably the best you will find in Bamberg. ||||We had dinner both nights during mid-week and the place was packed with friendly locals. You are assured to share your table, with several long communal tables available.. The food is basic local Bavarian, nothing fancy but hearty and the "Rauchbier" (smoke beer) is unique to only Bamberg.||||Be aware that this is truely a German Gasthaus.
