Last night, I came to Gnam for the first time. The relaxed, not-too-serious vibe immediately made me feel at ease. Fresh ribbons of flour-y pasta adorn the counter, alongside an array of sausages and charcuteries, whose smokey aroma fill the room. I ordered an off-menu guanciale and nduja pappardelle since they had ran out of salsiccia. We were dining late and the patron ensured me this was a rarity. She was extremely flexible and went as far as offering to cook me a new pasta in case I didn’t like it. Thankfully, this didn’t happen. What she served me was sublime. Savoury notes of emulsified nduja, the salty crunch of guanciale, and perfectly al dente pasta. Easily one of the best bowls of pasta I’ve eaten in Berlin. What made this meal even more special was the vibe that the patron has managed to instil. We sat for many moments after dinner exchanging stories on Berlin, food and our respective hometowns. She gave us a tiramisu and some drinks on the house, as well as charging me less for my makeshift pasta. If there’s any reason to go here - besides the fact that the food is fantastic - is to enjoy the warming comfort of its patrons.

Pasta Factory came highly recommended, but our experience far exceeded any expectations. I’ve never left a Google review before today, but I had such a lovely experience that I felt I had to share it. When you walk in, you’re instantly greeted with warmth and smiles from the staff. Mario makes it feel like you’re a guest at a house party, and in between taking orders, cracking jokes, and delivering food to tables, he switches out records on the turntable to keep the vibe upbeat and joyful. It was a pleasure from start to finish, including the bruschetta we ordered, and our pasta. I would’ve added a photo of the tiramisu, but we finished it faster than expected… I’ll certainly be coming back, and hope to meet the rest of the team. Part of me wants to keep this gem a secret, but the cat’s out of the bag. If you’re in Berlin, Pasta Factory is a must.

First things first - the place is super sweet, and the guy who does the cooking and welcoming of guests is very pleasant.

But...

The pasta was undercooked and tasteless. The carbonara sauce was very watery and runny, and the bacon used was like fatty-pork-grind cut into relatively big rectangular pieces and not fried at all, making it almost impossible to eat.

The antipasti plate on the main menu was not served in it’s entirety, as ingredients had been used up for the daily special, which meant no grilled vegetables for us. We did get a spinach-cheese paste to make up for it, but it wasn’t really an equal to vegetables. The sausage wasn’t added and we had to ask for the chorizo. It seemed that the nice guy had no idea what he was supposed to serve.

There were dirty plates everywhere, and our table wasn’t cleared either long after we were finished.

It seemed that the guy had been left alone to do everything, and ultimately he failed. He was stressed, rushing himself, sweating all over the place and in the end just not providing the best food he could. Our friends had been there another night and had a great experience.

So, as said, great guy...sweet place... but awful experience as a whole when it comes to the food. Be weary of...

Die Carbonara sind hier besonders herausragend. Die beste Carbonara welche ich je hatte.

Die Carbonara in diesem Restaurant, ist nach wie vor wirklich sehr sehr lecker. Aber ich ziehe 3 Sterne ab, warum? Wegen dem Mann, welcher wohl der Chef-Kellner ist. Ich war 4 mal bis jetzt in diesem Restaurant, 3 mal war er anwesend. Die 3 mal an denen er mich bedient hatte haben mir meinen Restaurantbesuch so sehr verdorben, das ich dorthin erstmal nicht mehr zum essen gehen möchte, trotz der super leckeren Carbonara. Klar könntet jetzt der Leser dieser Rezession sich denken was will er den? Wegen einem Kellner nicht mehr in ein Restaurant gehen? Ja, ich bin mir seiner Art und Weiße einfach sehr unzufrieden. Darf ja jeder selbst entscheiden ob jemand Anstoß nimmt oder nicht. Warum gehe ich nicht mehr? Der Kellner ist meist alleine somit ist die Chance das er dich bedient eigentlich sehr groß. Er vergisst regelmäßig teile der Bestellung (von 3 mal dort Essen mit ihm als Bedienung, hat er 3 mal was vergessen, von Getränken bis hin zu mehreren Hauptgerichten). Zugegeben, er hat sich entschuldigt und Rabatt gegeben aber mich stört es einfach, dass er immer etwas vergisst. Der Kellner ist sehr nett, aber unheimlich unruhig. Wenn er an dir vorbeiläuft hat man immer das Gefühl er wäre spät dran und versucht noch die Ringbahn zu erwischen. Der nächste Punkt ist etwas was mich letztlich dazu bewegt hat meine Rezession abzuändern. Nicht mal in einer Imbissbude wird jemand mit Reservierung an einen Tisch gesetzt an dem nicht mal ansatzweise genug Platz ist. Hier in dem Fall mit Reservierung Tage vorher, wurden wir zu 6 an 2 kleine Bistro-Tisch gesetzt. An so einem Tisch sitzt man zu zweit. Danach war es bei mir erstmal vorbei mit diesem Laden. Ich möchte noch feststellen ich nehme es diesem Kellner nicht übel aber für mich ist es eben wirklich unpassend in ein Restaurant zu gehen bei Preisen von ca. 28 Euro Pro Person und so einen Service zu bekommen.

Nachtrag: Nachdem der Inhaber, ich gehe davon aus es ist der Schlechte Kellner der hier antwortet, der die Rezensenten hier beleidigt, habe ich die Wertung auf 1 Stern herabgesetzt. Die Carbonara ist noch immer super aber der Service nicht. Da der Kellner sich dazu herablässt die Leute zu teils zu beleidigen in den Rezessionen frage ich mich was mit ihm nicht stimmt? Als Gastronom hat man die Kritik der Gäste zu akzeptieren und diese nicht zu beschimpfen. Dies sagt aber bereits alles über den Verfasser aus. Ich bin der Meinung ich habe meinen Kritikpunkt Sachlich vorgetragen ohne beleidigend zu werden oder unverschämt wie der Inhaber.
