Let’s start with service and the restaurant overall. Awesome place, service was incredibly helpful and its great to see the kitchen and that the noodles are indeed hand cut.
However, the soups themselves have been very underwhelming. Having spent some time in Korea, the Dak Kalguksu was unrecognisable to us. Maybe it’s a family recipe, so I am not quick trash the soup completely, but in Korea Dak Kalguksu is served with a clear broth with the chicken on top and smack of a spicy red paste. Not only that, while in Korea the dishes are simple, there is a lot of depth to them, as restaurants cook their broths for long time. This soup here was spicy and salty,however it was missing the umami you would get from a hearty broth.
The noodles were a huge disappointment. Totally appreciate the work that goes into making them, but the noodles were soggy and felt like mushy dough. They were missing the signature chewy texture you would get from the noodles.
Last thing is the banchan. Kimchi was barely fermented with almost no funkiness you would get from Kimchi and there was so much sesame oil, that it was coating my mouth.
Overall, the food was disappointing, but the whole concept was great, so 3 stars.
Will come back to try the Kalbi Kalguksu, as it looks more authentic. But chicken was so far a big disappointment.

The second time I visited, somehow the soup disappeared from the beef noodle soup. The noodle was so dry and cold, it formed a ball-like shape and was just one chunk of dough. Same thing for my friend. What is the point of having soup if there is no soup in it?
So we asked for more broth and one of the staff brought a very small amount of broth which consisted of a few spoonful for both of us. We asked for another one and he/she was visibly irritated and put the broth almost angrily at the table and left without saying anything. We were quite shocked.
However, another staff came to put the fire down by offering us complimentary starters. This was a nice gesture and we were soothed by his service and genuine wish to let the customers have a good experience at their restaurant, which should really be a big part of their mission - looked like people generally spend around 17-25 EUR per person, so i believe deserve a decent service.
