The Verdict
Place: Nice vibe. They tried to bring in Japanese Vibes into the resto with its wooden deco. although some Korean decors from its previous resto still exist (previous Soban), I would say its kind relax atmosphere.
People: Friendly and accommodating. The korean Guy waiter also offered free Rice refills. Good gesture I would say.
Food: so lets Start...
Gyoza: Typical but not Bad. It is more on the Korean side so I would suggest to change it to Japanese style so it would match the resto's concept.
Ebi Fry /Tempura: its Good but it is also typical ones that can be ordered elsewhere. Nothing special.
Tonkatsu Ramen: So Japan is my 2nd home already, with that said I know how a real Tonkatsu ramen see, smell and taste like. The one they have is quite different from the original one. it taste kinda bland and lacks to be honest intensity from its soup base. I would suggest to invest more time in creating good soup base. It's like the soup base lacks essence of bone stock to create that umami taste. I would suggest to invest more on the soup and its quality. also the charsiu meat that comes with it must be grilled, not just boiled. overall I have high hopes that they'll improve it more.
Tonkatsu Rosu: So this one got also my attention. The Rosu pork they choose is not actually bad. But it lacks one thing, fat. the Fatty side of Rosu Pork keeps the Tonkatsu juicy and not dry after cooking. They cooked the Tonkatsu actually good but since It lacks Fat, it turned out to be abit dry and when it gets cold, gets abit rubbery already. I would suggest to choose cuts with right portion of meat and fats so when cooked, it retains it juiciness inside. I have high hopes on this one and I hope they'll improve it.
Price: I would say abit on high side although they try to make the quality and the price on the same level.
Verdict: ⭐️⭐️⭐️✨ 3.5 Stars
I would say there are rooms for improvements and if they want to gain popularity as a Japanese Resto, they should consider also to do some changes specially on those Items mentioned above.

Read moreThe other Soban location is one of my favourite places to eat in Heidelberg, so I've been looking forward to coming here for Ramen. The service is courteous and fast, the atmosphere is great, and I really enjoyed the Tonkotsu broth. I've had other versions that are very heavy and put you right to sleep, but this was rich and flavourful without being too much. You can really enjoy the whole bowl. Looking forward to coming back to try...
