Drei Hefen — Restaurant in Koblenz

Cool concept, great ideas, good ingredients, friendly staff but still lacking the skills to deliver a top product.

Drei Hefen is a hip, modern pizza & pasta bar in the middle of Koblenz old city. The concept combines Italian classics with modern interpretations, using real quality ingredients and honoring the Italian tradition of good food. It’s a perfect place to also come and enjoy with a group of friends. The service is young and friendly, and the beer and wine tastings you can order alongside your meals are a cool option for your tastebuds.

This place is a welcome addition to what is otherwise a rather bleak culinary landscape in Koblenz, which is dominated by many chain concepts.

The quality of products, from the charcuterie, to the cheeses and even tomatoes sauce is very good. This place really has potential, but sadly the skills are not there yet to deliver on that. I welcome it when pasta is al dente, but here, on two visits the pasta has gone beyond what even Neapolitans would consider al dente and has been in parts still crunchy at the core. Don’t get me wrong, the sauce and ingredients were great, but the boiling point has been missed by quite a bit. On the pizza side, the flavor of the quality ingredients unfortunately vanishes under a persistent layer of charcoal. The pizzaiolo is struggling to manage the ovens heat, meaning you have plenty of burned spots on the side and underneath the pizza.

This is a real pity, cause as an Italian I crave for a place I can come back to repeatedly for a Neapolitan-style pizza.

If the above issues can be fixed, I’d rate this as a five star, but for the time being, this leaves me with little option and limits my intention to return a third, fourth or fifth time. But will give this place another chance...

Excellent. super friendly and quick service and cool atmosphere ! Thanks again! Enjoyed the large selection of beers/ wine. The flight was displayed very cool - quiet fun with the colors and „tasting experience“! Definitely worth it! With regards to food, it was okay/good! We got the GOAT Pasta which could have used some more spices in my opinion and was a bit too creamy / cheesy! Maybe just not the perfect option for me and someone else may really enjoy it! With regards to the carbonara, it was with eggs, so I assume rather the more original Italian style and not what you may be used to. I guess it wasn’t as creamy as expected with this this! Again, just personal opinion and for you just what you were looking for! May recommend calling ahead and ordering a table, we got there just before dinner rush and had no issue...

Ich war jetzt zwei mal für Events in den Drei Hefen und diese Rezension bezieht sich auf die Eventlocation im ersten Stock (1st-Floor). Erst einmal gibt es viel Positives zu berichten. Die Location an sich ist sehr schön, man kann mit der Gruppe in herrlichem Ambiente feiern. Für mich haben die Räumlichkeiten das Flair eines eigenen "Wohnraumes". Das Ganze ist eben abgeschlossen und sehr heimelig. Es ist als ob man Freunde in die eigene Wohnung eingeladen hätte. Die Bedienungen sind ausserordentlich freundlich und zuvorkommend. Das Essen ist hochpreisig, was mich aber bei einer solch tollen Location mit entsprechender Dienstleistung dann auch nicht stört. Die Pizzen sind aus meiner Sicht hervorragend. Nicht gefallen hat mir die fehlende Möglichkeit, ein alkoholfreies Bier, Weizen oder Ähnliches zu bekommen. Wenn man keinen Alkohol trinken möchte, muss man mit Hopfenlimo (die mir nicht schmeckt), Mate-Getränken (die man nicht unbegrenzt trinken kann) oder dann eben so etwas wie Traubenschorle oder Wasser auskommen. Leider konnte man auch keinen Filterkaffee bekommen (Espresso schon, aber den trinke ich nicht). Alkoholfreie Biere/Weizen oder auch Filterkaffee sollten aus meiner Sicht für so eine tolle und dann ja auch berechtigt etwas höherpreisige Location zum Standard gehören. Leider konnte ich auch die schöne Lachspizza beim zweiten Mal nicht bekommen, da diese von der Karte verschwunden war (weil sie wohl als zu hochpreisig von den Kunden wahrgenommen wurde). Das fand ich dann wiederum auch schade, weil diese wirklich außergewöhnlich gut war und ich durchaus bereit bin, für frische hochwertige Zutaten dann auch den Preis zu bezahlen. Die sollte wieder auf die Karte kommen. Auch nicht so schön fand ich die Vorspeisenteller, die nahezu ausschließlich aus Wurst, Schinken u.ä. bestanden. Alles hochwertig, aber das hätte ich mir etwas weniger fleischlastig gewünscht. Hier muss ich allerdings dazu sagen, dass ich nicht weiß, ob wir das auch hätten anders vorbestellen können. Insgesamt wurde der schöne Abend in tollem Ambiente und mit netter Bedienung also dadurch getrübt, das ich persönlich bei Getränken und Speisen so viele Abstriche machen musste. Ich hoffe, ihr könnt da noch etwas nachlegen, denn Location und Konzept finde ich an sich wirklich...
