We visited this unique bar twice while enjoying our stay at the Four Seasons. It was an experience unlike any other! The manager's focus on sustainability truly make this space a story to be discovered. Everything in sight is carefully crafted to emphasize recycling and reusing. From the art, to the glassware, to the drink ingredients, everything has been considered. The arak tasting room was a fun and informative experience, as was the story behind each element of barware. Anyone who appreciates eco friendliness will appreciate the effort that has gone into the design of this one of a kind place. 四季酒店的酒吧一向是頂尖水準,翻開 2023 年的 Asia's Best Bars 名單,就佔了 6 家,分別是曼谷 (BKK Social Club, #3)、香港 (ARGO, #8)、東京 (VIRTÙ, #20)、吉隆坡 (Trigona, #36)、班加羅爾 (Copitas, #38) 以及首爾 (Charles H., #51),可以說是跟 SG Group 分庭抗禮的品質保證。
但是去完峇里島的 TELU 後,我是覺得還需要再努力一些啦。
TELU 是峇里語的三,代表了 Harmony with Nature, People, and Soul 這三種中心思想,也反映在 Signature 酒單的設計上;酒單本身是用再生材質,當耗損之後他們會撕碎酒單、丟入土中,將原先再生紙質中種子種植生長。而整間店位在 Four Seasons 深處,不僅隱密也非常符合海島自然風:庭院池塘、植栽藤編、開放式空間等。
這裡的特色是運用很多峇里島傳統酒種 arak,跟中東的茴香酒 arak 不同,是用椰子搭配不同原料來去蒸餾出來的當地特產,所以也會有像是 whiskey arak、gin arak 或 tequila arak 的差別(這點怎麼又跟 SG Group 的 sochu 系列有些雷同)。而店裡還有個 arak cellar 收集了峇里島各處不同的 arak,雖然酒藏沒有到壯觀但進去參觀也是挺有意思的。
回到調酒本身,前兩杯選了最受歡迎的 Down to Earth 跟 1945。兩杯都是當地琴酒品牌 East Indies 為基底,做了些澄清的處理、比較清爽的風格。其中 Down to Earth 雖然有我不太喜歡的抹茶,但用椰奶做奶洗後反而讓風味跟其他熱帶水果,如百香果,有比較圓潤的融合,算是今晚我最喜歡的一杯。
第二輪點了 Sensation 還有 Babi Old Fashioned。後者的命名由來是印尼傳統美食脆皮豬 Babi guling,油洗過的 bourbon 加上棕櫚糖做出來的 Old Fashioned。只是相較於一般常見的培根油洗,豬皮版本的風味不夠強烈,反而讓本身的油味有些明顯卻厚度不足;甜度較低的棕櫚糖也無法很好地平衡掉整杯酒,讓我稍微喝不太懂。
倒是前者讓我出乎意料。加入了山竹 arak 還有香蕉、酪梨跟可可等元素,必須說有點玄妙但不難喝;感覺很適合當早午餐飲料、一種 boozy smoothie 的概念。有點可惜的是沒有點到他們自製的澄清版 Espresso...
