A place of history. A small family dedicating their life into making just one kind of sandwich. The gem is the Torta di ceci, known also as a “Cecina” in Pisa (but don’t you dare ask them to give a Cecina, for the Livornese it’s always Torta di Ceci).
Simple ingredients, made with passion, love and you surely taste it. You’re welcomed with the whistles of the owner making the torta di ceci while his family members make the sandwiches. I suggest you take two 5e5 (panino, with the focaccia), one with and the other without “melanzane” (aubergines) for a taste with a spuma Bionda.

In the old days people were buying 5 cents off torta and 5 cents off bread… This is a must have experience… the unique chickpea kind of omelette (no eggs though… it’s actually vegan) served in a focaccia bread or “pane francese” (a roll with salt on top). Another addition can be marinated aubergines … locals are having it with “spuma bionda” it’s a typical soft drink but there are other choices of drinks. It’s a place you go only for this and nothing else… queues are often the sign of how good this is. If you are going to have a big lunch somewhere else, you can also try it without any bread. Unique point is that the chickpea/garbanzo bean pizza is freshly baked by wood fire and served immediately, and sometimes the queue is really long.
No sign board so look for a long line, and the beady curtain door.
