I’m afraid I really have to question anyone saying the pizza here is amazing, especially the Italians - you folks know better than that.
The base is thin and crispy, but that’s where the good things end sadly. It has very little flavour, there is a description on the website mentioning the slow fermentation that should make this base particularly good, but I couldn’t taste any of those lovely bready/yeasty/tangy flavours that you would get with a proper slow ferment, so my impression is they are cutting corners.
I’m not sure if this is a wood oven - poking my head into the kitchen I could see logs of wood on the floor but I couldn’t see any of it burning, there was no smell of it in the kitchen or flavour of it on the pizza itself. If it is, I would suggest adjusting the baking to get more of the flavour on it, if it’s not then that tells you all you need to know.
The quality of the toppings leaves a bit to be desired, which is a shame when you’re surrounded by tomatoes, olives, etc in Puglia.
I can account for the heterogeneity of reviews about the service at this place - most of the staff are very friendly, but there are a couple of women staff that will barely give you the time of day, so depending on who you get it could be a completely different experience.
To end on a positive, the prices are very fair which is very much appreciated given how many of the clientele...

However, service was terrible this sunday afternoon. Young lady was very unexperienced and unfriendly. Didn’t say a word. Put the dishes on the table in a very clumsy way. Pizza’s fell from both plates, fat from the pizza on my gf’s hands and skirt (can’t get it out anymore so ruined) beer (12euro per bottle) on the pizza and on my shirt, pants and arms. They didn’t apologize. Got two new pizza’s: again very clumsy and unfriendly. After we left and paid the bill i mentioned that we would have appreciated an apology or sign that they cared about what happened since clothes were ruined, skin got burned and halfnof the beer got lost. However, nothing at all. She said they already offered two new pizza’s (which was the least they could do given one was folded on the table and the other one had a full glass of beer spoilt on it). They didn’t seem to ubderstand it was just about being very and that they could offer a napkin or so help it clean. Suddenly she didn’t understand english anymore. When i left, she yelled something.
Given the amount of positive reviews on service, i expect these two ladies are just temporary stand-in forces. At least i hope so. The location and the good pizza’s and cooks...

I just love a lot about this place. It's located in a super cute alley, the staff is extremely friendly and helpful, and you are served your food before you know it.
Thing is, I was not super excited about their pizzas. The base is interesting. A bit of a darker taste than usual, probably due to their more spelt based dough. A lot of flavor.
However, I was hoping for a nice thick fluffy crust like the Neapolitan pizzas that I always get carried away with. Unfortunately, these pizza crusts were thick but quite dense. A bit too dense for my liking.
The pizza toppings did not make up for it. It wasn't bad but tasted a bit boring. So in the end, both the red and bianchi pizza were just not that great. Your miles may vary with other flavors.
The tiramisu cake was a bit dry, with the mascarpone tasting just like mascarpone, so the end wasn't the very sweetest. And I really wanted it to be.
The antipasti was very nice. And eating in that little street is very romantic, with their upper floor tables looking very cosy as well. So go there for the experience. You might be lucky and feel their pizzas are...
