I arrived with my boyfriend and we began with local cold cuts and cheese plate. The dried meat was excellent, like the sausages. The cheeses covered bovine, goat, pepper, raw milk and a fruity mold I last enjoyed in that quality in a cheesebar in California half a decade ago. I ordered the "Marinara" (the sea) and my bf “The Shitake". I found his pizza earthy and mushroomy the essence of fungus its tail end landing smoothly on the olive oil. Marinara pizza was slightly salty, with the fishy taste of the anchovies and the moist tomatoes completing the taste of the sea. How does the sea taste? Salty, fishy and probably wet, but not as delicious as these pizza.
This is the core of this place it serves you ideas as food formed experience if you wish to taste Shitake they will serve you Shitake if you wish to taste the sea they will serve you the sea.
And if you, as we did, ask for chocolate they will serve you Chocolate. A sphere of it chocolate sauce on chocolate the flakes layer upon layer each with more cacao than the one before and do you dig to the core of planet Chocolate cleansing your palate with the biscuits on the side until you reach the core of chocolate a single hard peace in the center. You may disagree with cacao being the essence of chocolate but this desert made a very strong argument in favor of it.
Below the Palatine, the imperial Hill this place is well located and the food there is worth twice its price. If you want to enjoy, can spare 20€ for a meal and taste the difference between a sweet and a sour tomato this place will over you an experience quite rare in our world of supermarket fodder and chain fried trash.

Read moreWow, what a restaurant! Hands down the best carbonara I’ve ever had. My husband and I are visiting Rome and found this spot through reviews and photos because I was determined to have carbonara tonight. From the moment we sat down, we not only felt warmly welcomed but were immediately greeted with genuine kindness.
We were offered a little crispy bread with tomato as a welcome appetizer and ordered the baccalà (fried cod and potato ball) to start. For mains, I had the carbonara pasta and my husband had the pizza puttanesca, perfect for him since he’s lactose intolerant.
The carbonara honestly left me speechless: tender, perfectly al dente pasta with just the right amount of salt, cheesy yet balanced, creamy, soft, and rich. Truly everything you could want. To finish, we had the tiramisu. All fatto in casa!
I believe it was the owner himself who served us, and his sincerity, friendliness, and attentiveness made the whole experience unforgettable.
I 100% recommend this place, it’s a must...

The owner opened up about 2 months ago after l working in food his whole life. He has undoubtedly put his heart into this place. He welcomed us with big smiles and a hospitable nature. We were hot and tired after walking around Rome, and he immediately put us at ease.
The food is out of this world. He brought us a complimentary appetizer that appeared simple but had extraordinary flavor. We ordered the Shitake and the Guinea Fowl and were blown away at the simple complexity of the flavors and textures. The crust almost tastes lightly fried, with a crunch that softens with each bite and nearly melts in your mouth. The chosen toppings complement each other in a beautiful way, while each managing to stand out from the other.
Conso is nearly hidden among a long stretch of other restaurants and cafes, but it certainly stands out as the best...
