Brunch Republic in Trieste is one of those places that never disappoints! I’ve been there several times, and every single visit has been a great experience. The food is always fresh, tasty, and beautifully presented.

Their menu has a perfect balance of sweet and savory options, so whether you’re in the mood for pancakes, waffles, or something hearty like eggs, chicken, and burritos, you’ll find something you love. Personally, I really recommend the crunchy chicken burrito — it’s light, flavorful, and perfectly wrapped. The sweet potato fries are another highlight: crispy on the outside, soft inside, and simply delicious.

They also have great sweet dishes and desserts, all well-prepared and satisfying without being too heavy.

But what really makes this place stand out is the staff — always polite, friendly, and super helpful. They’re fast, attentive, and genuinely care about giving you a good experience. Every time I go, I feel welcomed and well taken care of.

Me and my sister went here and unfortunately it was extremely disappointing. The staff were nice but the food was terrible and really over priced! My sister got the bacon breakfast bagel, she thought the ingredients tasted cheap - it was plastic cheese and instead of bacon just plain ham. I got a veggie breakfast burger. The “fried” egg was more or less raw. It was disgustingly and completely ruined the entire meal. There was egg goo all over the chips and it stuck the bun also making it completely soggy. I asked to substitute the salad for avocado. They obliged but didn’t inform me it would cost an extra €2. I ended up paying €22 for a soggy burger, inedible chips drowned in raw egg and an orange juice. My sister paid €15 for water and a cheap bagel. Safe to say we won’t be returning...

Il menu, perfetto per ogni momento della giornata, offre proposte deliziose: dall’“Eggs & Bacon” al “Breakfast Burrito”, passando per i toast all’avocado (come il “Creamy Salmon”) e club sandwich ricchi di gusto. Servono uova in camicia e bacon croccante, bagel al salmone, e tante opzioni vegane o senza glutine – ideali per ogni esigenza. I prezzi (tra 9–15 €) sono proporzionati all’alta qualità.

Ma ciò che ha davvero reso questa visita speciale è stato Jeshua, il nostro cameriere e barman. Con un sorriso contagioso e una professionalità che trasmette passione, ha saputo guidarci tra le proposte, consigliarci le bevande perfette e rendere unico ogni istante:

Ha creato per noi cocktail personalizzati e impeccabili, dimostrando grande dimestichezza al banco. Ci ha consigliato con brillantezza abbinamenti eccellenti: il Salmon Bagel” con un drink fresco era un’esplosione di sapori. Tra una chiacchiera simpatica e accorte attenzioni (come offrire acqua e chiedere un parere sul cibo), ha trasformato una semplice visita in un’esperienza calorosa da amici.

Il servizio è stato rapido, attento, senza fretta né pressioni – tutto con naturalezza e gentilezza.

In sintesi: il locale è ben progettato, il menu è vario e gustoso, ma è stata la cura di Jeshua a fare davvero la differenza: un vero professionista con cuore e talento. Lo raccomando a chiunque: vale la pena tornare anche solo per prendersi un cocktail servito da lui.
