Ristorante Carmagnola — Restaurant in Udine

The food was delicious and the staff in general were very friendly and attentive. Unfortunately, my experience with the head of staff was less positive. I initially ordered a sparkling wine while my partner was undecided about which white wine to choose. The head of staff kindly brought four open bottles, three whites and one sparkling. He let her taste two and she selected one. At that point, I decided I would also prefer a white wine instead of sparkling and asked if I might taste one. To my surprise, he declined, saying that he couldn’t allow “everyone in the restaurant” to taste all the wines. We arrived at opening and seated without a reservation. We ordered a squid appetizer. As entrees my wife ordered the rabbit ravioli and I the salmon. The appetizer arrived with my salmon entree. Not ideal but what the heck. We typically share our entrees so we ate what was served. Of course thinking the ravioli would soon arrive. Nope. As we watched another table who ordered after us eat their dinner and desert, our ravioli arrived 40 minutes after our first course. Taste was fine though pasta was undercooked and tough. We ate all 6 tiny ravioli, paid our bill and left. No tip as they charged 6euros for bread we didn’t order. Bread was great tho. “Quando il lusso incontra il comfort, l’esperienza diventa indimenticabile…”

Dopo averne sentito parlare spesso, finalmente abbiamo deciso di prenotare un tavolo per due al Ristorante Carmagnola di Udine, e posso dire senza esitazioni che è stata una delle migliori esperienze culinarie che abbiamo mai vissuto. Pur avendo visitato ristoranti stellati e gourmet in passato, questo locale si è davvero distinto, offrendo un’esperienza che ha superato ogni aspettativa.

All’arrivo, siamo stati accolti dal simpaticissimo Nicola, il proprietario, che con grande maestria e professionalità ci ha fatto sentire subito a nostro agio. La sua cordialità e attenzione sono stati accompagnati da un servizio impeccabile: il cameriere, altamente professionale, ha descritto con precisione i piatti, arricchendo l’esperienza con dettagli su ogni portata. Nicola ha monitorato la serata con la sapienza di un maestro, ma con quella simpatia che rende tutto ancora più speciale.

Abbiamo scelto il menù degustazione, ed è stata una scelta perfetta. La chef è riuscita a stregare anche i palati più esigenti con una combinazione straordinaria di materie prime di altissima qualità e una cura eccezionale nella preparazione dei piatti. I sapori sono stati orchestrati in modo sublime, e ancora mi chiedo come una tale bravura non abbia ancora ricevuto stelle Michelin. Sono sicuro che sia solo questione di tempo.

Il Ristorante Carmagnola ha riaperto dopo una ristrutturazione importante nel 2020, un progetto nato durante la pandemia come atto di fiducia nel futuro. Il locale è accogliente e moderno, con un’atmosfera che mescola tradizione e innovazione. Ogni piatto riflette l’attenzione per la stagionalità e la freschezza degli ingredienti, con un tocco creativo che lo rende davvero unico.
