Notime Mixology Bar is a true hidden gem for cocktail and coffee lovers in Fukuoka.
This newly opened bar, led by the talented Taka-san, perfectly blends the art of mixology and barista expertise. With his extensive experience in both fields, Taka-san creates drinks that offer a true multisensory delight. Every item we tried was impeccably presented, aromatic, and had a beautifully balanced flavor profile. This bar has now earned its place as my all-time favorite in Japan.

Four Season: A must-try cocktail that beautifully reflects Taka-san's creative interpretation of Japan’s four seasons.
Parfait: A dessert that is as visually stunning as it is delicious.
Coffee: The perfect way to conclude the night. We enjoyed the Colombia Honey Process, which impressed us so much we couldn't leave without taking a bag home.
We highly recommend sitting at the counter bar. Watching Taka-san work his magic up close and interacting with him added a unique and personal touch to the experience.
Our only regret? Finding this bar on our last day in Fukuoka. If we had discovered it sooner, it would have become a regular stop...
Read moreI have to admit I was a little sceptical at first when I saw this place only had 5 star reviews (I thought some must have been fake) but after visiting this place it’s clear to see why it has a perfect rating from hundreds of reviews!
Everything from the innovative drinks (that are very well explained and laid out on the English menu) to the atmosphere, to the friendly staff make this a must-visit.
I was also a little wary that the drinks here would be unique just for the novelty factor but I’m pleased to say that all of the drinks were expertly mixed and delicious. I had about 5-6 cocktails and all were fantastic, but my personal favourite was the trio of negronis they offer in half size servings so you get to sample them all for 2500 yen.
Although I spoke to the bartenders in Japanese, they seemed more than capable of conversing with customers and explaining the drinks in English, so definitely don’t hesitate to stop by if you know no Japanese.
For me, this place and Citadel are the absolute must-visit bars in Fukuoka; even in Tokyo such creative bars with great atmosphere and staff can be tricky to find, so don’t pass up the...

Foreigners are welcome at this bar and the mixologists are great at explaining the drinks. An English menu is available online but having a translation app handy for the Japanese menu doesn’t hurt.
We were sat at a booth and offered three choices of wet wipes (lavender, bergamot, and rose). Water and premium mixed nuts came after ordering.
We each ordered a different cocktail and we could tell each one was crafted with care and artistry. The cocktails here aren’t just pretty, they taste great. I had the tequila-based Sunday breakfast which came with this refreshing fizzy yogurt foam and was served in a porcelain tea cup with an orchid. Other cocktails: strawberry shortcake was sweet and came with the same yogurt foam to balance it out; the yuzu cocktail was layered and citrusy but bitter.
