Gomenya — Restaurant in Hiroshima

As a foodie who loves to try new things, I was immediately drawn to the refreshingly clear and bright sauce when I first tasted the Hiroshima-style soba noodles. Gently dipping the long, chewy noodles into the sauce, I was hit with a cool, crisp flavor that seemed to spread across my palate. The expertly balanced sauce, with its rich umami notes, made the hot summer day feel remarkably refreshing and pleasant.

At the same time, the texture of the noodles themselves left a deep impression on me. Unlike typical ramen or udon, these noodles were more delicate and soft, Coated in the sauce, the noodles became even more silky smooth, leaving me craving more. The sauce it’s quite similar to Dan Dan noodles but more refreshing and light.

The soft and savory soft-boiled egg, and the fragrant and tender chashu pork - each component added another layer of complexity and delight to this cooling dish. Sampling them one by one, the depth of flavors had me lingering...

It's rare to receive bad service in Japan, so I thought I'd write a review to save other customers from having a bad experience. One of the worst in 20 years living here. The server seemed to have a problem understanding her own menu, didn't check our order, brought the wrong thing and acted irritated with us when we put her right very politely. Then failed to apologize in any way. Ironic given the restaurant's name is "ごめん屋". The food was so so, very salty and even the mildest one was too spicy for most of my family. アクアセンターにひっそり佇む、カウンターオンリーの店舗。

注文は「とんこつラーメン白玉」と「炒飯おにぎり」。 セットで1000円出してお釣りの来る安さです。

炒飯おにぎりはギュッと丸められています。（今思えばパラパラだからギュッとせざるを得ないのかな、と）

スープはシンプルな豚骨ながらねっとりした深みあり…というと複雑なのですが、うまかっちゃんをめちゃくちゃ高級・上品・丁寧に進化させたようなスープ。ずずッと飲み干してしまいます。 麺はわりと加水効いてる？感じの細めの麺。 注文で硬さを聞いてくれます。バリカタできますか？と聞くと「できる限り固くしますね！」と丁寧な対応（確かにバリカタにする麺ではなさそう）してくれました。
