This was an eye opening experience for how good food can get. My sister and I had just arrived into town and we decided to go here for dinner. That day the chef had prepared an immaculate 7 course meal focused around seafood. We arrived just before it opened and we were able to sit in the center of the 6 seat counter and converse and engage with the chef through the night. The food was just divine. It was also wonderful to try the best of ingredients and get introduced to some new ones as the chef prepared and spoke to each of the dishes.

While all the food was fantastic, these two dishes blew me away:

Local octopus and shrimp, with Bonito from Nagasaki. Complemented with local vegetable purees with an apple ginger sauce: this was undisputably the best octopus I have ever had. The legs were tender and sweet. The suckers were slightly crunchy with a burst of flavor when you bit in. The shrimp was sweet and delicate. The Bonito had a firm smoky presence to back up the dish and the vegetable purees + apple ginger sauce were a great accompanyment.

Managatsuo fish, rice malt (shiokoji), local seaweed from wajima, microsprouts, yuzu dressing: the yuzu dressing with the microsprouts' flavor popped. Exceptional 7-Course Experience at Busaku Restaurant

We had an unforgettable dining experience at Busaku Restaurant, opting for their exquisite 7-course meal. From the moment we sat down, Chef Hiro and Sous Chef Teru made us feel welcome with their warm hospitality and excellent English. They took the time to explain every dish in detail, from the type of fish to the local, fresh ingredients that made each course truly special. Their passion for their craft really shines through.

We initially tried making a reservation online but were surprised to see that the earliest availability was two days later. Knowing it wasn’t peak season and that we were staying nearby, we decided to try our luck as walk-ins. So glad we did! We were seated right away and ended up being the only guests, which made the evening feel like an intimate, private dining experience with personal attention from the chefs.

Each plate was a work of art, and you could taste the freshness and quality in every bite. It’s clear that Chef Hiro and Sous Chef Teru take great pride in their ingredients and presentation.

If you’re looking for a memorable culinary experience that showcases both skill and genuine care, Busaku Restaurant is a must-visit. We left completely satisfied and would gladly return next time we’re...

Walked in during a rainy evening and we were lucky to find this cozy eight-seater run by Hiro and Teru.

Being english speakers, it’s typically not easy to understand the complexity and ingenuity that runs behind the chefs’ minds. However, chefs were patient to explain (in good english) the various ingredients and how best to consume the creative dishes.

Overall, food was French-inspired Japanese cuisine using locally sourced ingredients coupled with some French cooking methods. The depth of flavours blew my mind - it kept the best of both cuisines.

The service was impeccable, with the chefs walking us out after the meal and even offering an umbrella to shelter us from the rain.

Cozy atmosphere - there was a heater embedded under the table which kept the guests comfortably warm.

While we walked in, it was just a seven-course menu however chefs mentioned if we booked in advance we could get a ten-course as they needed time to prepare. Recommend booking in future!

Looking forward to visiting again in the future to see how the restaurants bloom like the cherry blossoms we saw during this wonderful season.
