Unfortunately the incredible fluffiness of the pancakes was not matched by an equivalent amount of taste.
The location is really nice & elegant, placed in the center of the biggest Geisha quarter in Kanazawa.
Waiting time to be accommodated at a table was a bit longer than expected (there were at least 4 free tables when we were shown which one ours was) but then the serving time was considerably shorter than any other pace doing fluffy pancake (less than 10ins vs at least 20mins).
The options offered all looked amazing & very elegant. I appreciated that there were 2 seasonal specialties.
The pancakes we had were as fluffy as they could have possibly been.
Unfortunately the taste was just ok and the pancakes were barely warm. Probably because they are produced by an external provider (at least this is what I understood from reading the menu).

I have eaten Eggs Benedict in twenty restaurants around Japan at many price points, often considerably more expensive than my meal today costed. But not once have I ever been satisfied with my meal. Until today. The Eggs Benedict at Cafe Tamon is the only way it should ever be prepared. The sauce strikes the perfect balance of its simple ingredients, perfectly salty, sour, and buttery.
The texture of the pancakes is also divine. I indulged in a scone/biscuit here, as well, and although the crumb was quite dense and crumbly, almost like shortbread in a way, it was delightful. The only point of critique I have is that the butter served along with the scone was cold and rock hard—impossible to spread.

The interior is very minimal and the atmosphere is calm.
The waiters at the cafe came quickly to take our orders, but unfortunately me and my partner’s pancakes were served almost 15 minutes apart. It would have been much better if they had told us that we would have to wait, so we could have asked to have them both served at the same time. I would not have minded waiting for that, so I would recommend the staff to warn customers ahead of time if there will be a difference in serving time.
The Kanazawa Gold pancakes were really fluffy and delicious. No complains about the taste or presentation! They were SO filling, so you should definitely come on an empty stomach.
