I recently dined at Mame Niseko, and overall, it was a pleasant experience, though there were a few areas that could be improved. The restaurant has a cozy, welcoming atmosphere with a modern touch, and the staff provided excellent service from the moment we arrived. They were friendly, attentive, and made sure we felt comfortable throughout our meal.

The menu offers a variety of enticing dishes, and we were excited to try their highly recommended Wagyu beef. Unfortunately, this was where our experience fell short. The Wagyu, known for its rich marbling and tenderness, was unfortunately overcooked when it first arrived. We politely asked for it to be replaced, hoping for a better result, but even after the second attempt, it was still overdone. Given the premium nature of Wagyu, we expected it to be prepared with more care to highlight its quality.

That said, the staff handled our concerns with professionalism and genuinely tried to make things right, which we truly appreciated. Their attentive service definitely stood out, as they were apologetic and eager to ensure our satisfaction.

Aside from the Wagyu, the other dishes we ordered were flavorful and well-prepared. The presentation was beautiful, and the fresh ingredients really shone through in every bite. The ambiance of the restaurant added to the overall dining experience, making it a comfortable spot to relax and enjoy a meal.

While I’m giving Mame Niseko a 3-star rating due to the issue with the Wagyu beef, I’d still recommend the restaurant for its excellent service and cozy atmosphere. I hope they can improve on the consistency of their Wagyu preparation, as it has the potential to be outstanding. I’d consider giving it another try...

Dear Chef Endo, My heartfelt thanks for an incredible and memorable dining experience at your fine restaurant, MAME, Niseko, which is by far the best I have ever had in the many countries I have travelled in. The presentation of each course and the creativity displayed in each dish were simply stunning. The perfectly balanced flavors were works of art. Your mastery of technique and your commitment to using only the freshest, highest-quality ingredients is commendable. I can't wait to share my experience with all my friends and family members.

It' is also clear that you and your team are deeply passionate about providing an unforgettable experience for your guests. The attentive service, the elegant ambiance, and the obvious pride you take in your work all contributed to making this one of the finest meals I've ever had the pleasure of enjoying.

It's no wonder your restaurant has garnered such a stellar reputation. Thank you for squeezing me in for a meal to experience the finest. A shout out to your wonderful colleague, Erica who is incredible - her level of service was impeccable from my reservation experience to dining there. I am looking forward to returning to Niseko to savour your creation again. I will not even book a flight until and unless I get my reservation at...

Nestled in Hokkaido, Mame, orchestrated by Chef Hideki Endo, is a symphony of meticulous detail and warm hospitality. Under restaurant manager Erica's guidance, from reservation to service, the experience is a seamless blend of precision and genuine care, setting the stage for an enchanting evening.

From monkfish liver and uni to wagyu beef, toro, and a special catch, like the rare Kinki fish, each dish at Mame reveals the chef's global journey – a testament not only to his time spent abroad but to honor the authenticity of his Hokkaido roots. Traces of his Matsuhisa days subtly emerge, such as the honeycomb potato chip, adding a nostalgic touch to his culinary narrative.

In a separate culinary act, Chef Endo's sushi mastery unfolds like a dance of hands, a reserved yet cheerful performance that creates a sensory journey. Each grain of rice is discernible, harmonizing flawlessly with the seafood. Mame diverges from the conventions of traditional Michelin and French-style restaurants, embracing contemporary Japanese cuisine with Hokkaido's freshest ingredients.

The restaurant itself, akin to an art gallery, presents each dish as a masterpiece, capturing the essence of Chef Endo's culinary exploration. It's not just dining; it's a captivating performance on a...

A true gem in Niseko. Dad and I were looking for a place to celebrate mum’s birthday and was blessed to secure a spot at Mame – thanks to the kind team at Ritz for helping with the reservation. Each course was thoughtfully curated and accentuated by the choice of ingredients, the combination of flavours quietly reflecting Chef Endo’s depth of training and culinary influences. Erika also very kindly explained to us the local specialties. Loved the rendition of ceviche soup, perfect balance of tang and sweetness, paired beautifully with the fish. Also appreciate the little but significant touches e.g. the house-made ‘better-than-bonito’ flakes (will leave this as a surprise for your own visit!) and their clean, delicate ginger. The team added a lovely celebratory gesture at the end of our dinner. Safe to say mum was wonderfully surprised and we all left with very happy bellies. They really delivered. Thoroughly enjoyed every dish. And of course, the sweetest mademoiselle Mame who kept us company throughout the evening. A place we’d gladly return to. Would recommend to anyone looking for an intentional, well-executed meal. Best to book ahead.
