長崎の鮨店、それもそれなりの評価を得ているお店は（無論好みの合う合わないはあれど）光る点が多いのだが、残念ながら現状のでじまさんにはそれを感じることが出来なかった。端的言ってしまうと、仕事が旨さにつながっておらず、無駄手間になってしまっている。ならば余計なことはせず、仕入れを吟味し、ネタの暴力で勝負する方が良いのではないか、そう思わせる訪問だった。
