The pork in the Yamato Buta Soba reminded me of prime rib: pink hue, falling apart, juicy texture. Healthy dose of pork fat globules glistened on top of the meat like fresh Christmas snow. Noodles were slightly thick and had nice chew. Broth was dense. Thinly sliced red cabbage was a welcome surprise in color, crunch, and vegetables in such a meat extravaganza. Aburi Buta Don was chopped pork on a bed of fluffy white rice, topped with mayonnaise charred with an Iwatani blowtorch. I finished stuffed. The owner makes generous and so tasty crab ramen with a slight note of yuzu, it was real pleasure! As for the owner, he was kind and happy to share with me.
