Luckily got a chance to try this restaurant as the chain store was already closed at 8sth. Staff were nice and warm. They offered beef tongue set which comes with 2 different size. I went for the one with 8 pieces of beef tongue and the chef served with 4 pieces for twice. Maybe this could let the customer taste out the beef at the best condition? Size was generous too. 牛タンとは、かくも芳醇な旨味を秘めた部位だったか

大通の牛タン専門店にて食事をとった。牛タンといえば、焼きすぎれば硬くなり、火入れが浅ければ脂の甘みが活きない、極めて繊細な食材である。

だが、ここの牛タンは違った。 一枚一枚、丁寧に火を通されており、噛めば香ばしさの中からじわりと広がる旨味と脂の甘み。まさに、職人の仕事と呼ぶにふさわしい一皿である。

厚切りにも関わらず、繊維に逆らわぬ絶妙な包丁の入れ方により、舌の上でほどけるような食感を実現している。

そして、料理だけではない。店員の接客もまた素晴らしかった。 丁寧で気配りがありながらも押しつけがましさはなく、料理への自信と敬意が感じられる対応で、心地よい時間を演出してくれた。
