東麻布の「Ignis et Nox」にて、季節の恵みを凝縮したショートコースを体験してきた。全6皿、どれも舌を奪う洗練の連続。まずは「真鯛と茄子の瞬間マリネ」。柑橘の酸味がふわっと広がり、軽やかな余韻が夏の記憶を呼び覚ます。続く「穴子と大葉の春巻き」は、サクッと軽快な衣に潜む香りと旨み。仕上げにペコリーノと牛出汁の塩気が重なり、ひと口ごとに奥行きが増す。
「鮮魚のポワレ」は真鯛。皮目は香ばしく、身はしっとり。火入れの妙にうなるしかない。さらに圧巻は「本日のパスタ」。牛・豚・鹿のひき肉を贅沢に重ねたミートソース。肉の旨みが幾重にも押し寄せ、赤ワインを求めずにいられない。メインの「本日のお肉料理」はポーク。火の通りがまさに職人芸。ジューシーさと旨みの爆発に完全ノックアウトされた。
そして締めのデザート。パティシエ渾身の「バスクチーズケーキと旬の果実」。無花果とバスチーの妖艶な組み合わせ、チョコテリーヌと赤ワインの濃密なマリアージュ。甘美という言葉がこれほど似合う瞬間はない。飲み物はカールスバーグの生、スパークリング、赤ワインをたらふく。料理と酒が溶け合う時間は、まさに「火」と「夜」の宴。

At Ignis et Nox in Higashi-Azabu, I experienced a seasonal short course that distilled the essence of the moment into six exquisite dishes. Each plate was a refined surprise that captured my palate. It began with Sea bream and eggplant marinated in an instant, where a touch of citrus opened up like summer’s memory. Next came the Conger eel and shiso spring roll, its crisp bite revealing layers of aroma and flavor, finished with the salty depth of Pecorino Romano and beef broth.
The Poêlé of fresh fish—again sea bream—was perfection: skin seared crisp, flesh moist and tender. A masterclass in fire and timing. Then came the highlight: Today’s pasta, a ragù of beef, pork, and venison. The depth of meat flavors was irresistible, practically begging for red wine. The main course, Today’s meat dish, showcased pork cooked with genius precision—juicy, flavorful, absolutely stunning.
For dessert, the pastry chef’s Basque cheesecake with seasonal fruit. Figs paired with the cheesecake were seductive, while chocolate terrine with red wine was an indulgent finale. Each bite was a sweet revelation. To drink: Carlsberg on draft, sparkling wine, and red wine in abundance. The pairing of food and drink created a banquet of pure “fire” and “night.”

We enjoyed delicious food and met two wonderful people. Chef Yamato and our server, Yui gave us a culinary experience to remember.
This time we had been in Tokyo for a week and by far this was the best meal we had all week. In fact this is our third visit to Japan and this is probably the best meal we had in Japan.
We had the 6 course meal. Every bite delivered a wonderful chemical balance and an explosion of flavours. Every course was a wonderful gastronomic event.

This place offers wonderful dishes using seasonal ingredients with a course that includes a delicious fresh pasta and my personal favorite of the evening, pork shoulder steak, which was juicy and simply amazing! For dessert, the rich chocolate terrine was a perfect way to finish the evening. This place does an amazing job combining ingredients to maximize synergy. The place is also located very close to Tokyo tower, which has an amazing view at night, a great option for date night!
