I had the pleasure of visiting this sushi restaurant for a business dinner, and it was an exceptional experience from start to finish. The atmosphere is calm and elegant, creating the perfect setting for important conversations.

One of the highlights was watching the chef prepare eel over the charcoal grill right in front of us—a rare and impressive touch. The grilled dishes in general were outstanding, and the seasonal small plates were beautifully presented and full of flavor. The sushi itself was remarkable, featuring fish sourced directly from a renowned fisherman in Ehime. The attention to detail, even in the handling of the knives, showed true craftsmanship.

The beverage selection is excellent, with a wide range of both sake and wine, allowing thoughtful pairings throughout the meal. The young head chef is not only highly knowledgeable but also approachable, which made the evening both relaxed and refined.

I stopped by this sushi restaurant near Ebisu Garden Place, just a short walk from Ebisu Station, and had such a great experience. The tuna sushi was unbelievably soft — it literally melted in my mouth. I also had unagi (eel), which was rich in flavor and perfectly cooked. The chef was very kind and asked about my likes and dislikes before preparing the dishes, which made the whole experience feel personal and comfortable. They offer a nice variety of Japanese sake and wine, and the staff gave good pairing suggestions too. Sushi Seidai opened in Ebisu on September 1, 2025. The 29-year-old chef trained at Sushi Endo in Tokyo and Sushi Akayoshi in Imabari (Michelin-starred), as well as under fisherman Junichi Fujimoto.
