He ordered causa de pollo, ceviche mixto, papa a la huancaina, aji de gallina, lomo saltado, and camarones al pisco and we all shared. And of course there were plenty of Inca colas and chicha mirada (which we ordered without ice and promptly were given glasses only half full of the drink, which… fair enough haha).
All of it was delicious. My one critical thought was that the lomo saltado had lost something in its transition to an “upscale” version of the traditional dish. Maybe I’m not enough of an expert to know exactly what it is. Or maybe sometimes there’s no beating...
