Chūka-soba Aoba Hachiōji — Restaurant in Tokyo

I found it very hard to write about this location. I visited twice, the first visit was amazing. Fast service and incredible ramen, what more could a foodie want? The second visit was... much more lackluster. The staff was very quiet and didn't interact much with customers. One of the staff members, a young bloke, was not very clean about how he handled the food. I watched him take a cloth and ring it out in the sink where the noodle strainer was. He splashed dirty water from the rag all around and it got into the water that was cooking noodles. I then watched him take the cloth, spray chemicals on it, and begin wiping down pots, pans, and the counters. When new customers came in, he made no attempt to wash the chemicals from his hands, and begin preparing their food with dirty hands. He massaged the noodles that were tossed into the strainer with cold water and served the dirty noodles to the customers. It's because of this incident that I will not eat there if he is cooking. But the older gentleman during the first visit was very clean and very interesting... So I guess watch out for the younger staff if you go...

今では、沢山のラーメン店が導入しているダブルスープ。動物系(豚骨、鶏)スープと魚系(鰹節、鰯節、煮干しなど)スープを合わせたスープの事です。 このダブルスープの先駆者で、世に広めたのがこちらの「中華そば青葉」

本店は、中野区にあり八王子のお店は、暖簾分けのお店です。

ラーメン店に限らず、暖簾分けされた多くの店が、本店と少し味が異なることが有りますが、青葉のお味は、何処の暖簾分けのお店も本店と比べ全く遜色ありません。

注文は、入り口にある券売機で食券を購入するシステムです。

I can summarize the experience with a single expression. Meh. Very mediocre and minimal portion for the prices it charges. They have very good chashu and menma but apart from that it's just average. Not worth the 800-1000 yen price tag it...
