This is a high-tech restaurant where you order using your phone. You access the internet via the QR code given. If you go there when they first open at 3:00 p.m., You won't need a reservation but if you go after 4:00 p.m. you might have to wait in line if you don't have a reservation. Of all the fish they serve, I like the Toro the best. Other fish that they have are very typical and in similar qualities to other restaurants with similar price point that they're charging. Nothing really stands out.
Three items that I would not recommend you to order, One is the Uni pudding and the other it's the rare beef over tofu. The Uni pudding has no uni flavor and the beef has lots of tendon plus the tofu is overly sweet. The third item is their fried Chicken, they slice the chicken pieces so they can quickly cook the chicken. But they missed the whole point of a fried chicken, when they slice the pieces, the umami juice in the meat will seep into the frying oil. The result is dry pieces of fried chicken.
They want fast turnover but they're doing it at the expense of quality food. Especially slicing the fish for the sashimi or sushi early, this process will dry out the surface of the fish before they are served to the customer. So you don't see that shining coating on the fresh sliced fish.
The tempera was okay same with the fish salad. One thing also to remember that don't over order because they don't have a takeout box for you to take home if you can't finish. So in ordering you could just order what you want first and you need more you can always go back into the same page...

We visited Hibi Hare Bare at 3 PM without a reservation and were seated immediately, which was a pleasant surprise.
The service was outstanding. Our server was polite and informative, guiding us through the QR menu and ordering system, as well as assisting with the restaurant’s WiFi connection.
The food exceeded our expectations. Having tried numerous sushi restaurants across Osaka, Kyoto, and Tokyo, Hibi Hare Bare stands out as one of the best, particularly for its exquisite salmon belly. Every dish was meticulously prepared and packed with flavor.
While the prices are on the higher side, they are reflective of the finer dining experience offered. For us, it was worth every yen.
Additionally, I appreciated the absence of any unpleasant fishy odors—a common concern for me—which made the experience even more enjoyable.
