🍜 特製つけ麺 / tokusei tsukemen 🇯🇵 自家製麺 ロビンソン / jikaseimen robinson / toranomon, tokyo 🗓️ 07/10/2024
(@wei.oframen on ig for my ramen adventure 😚)
Robinson is a shop that I stalled for quite a while now, mainly because it was closed for the majority of my last visit to Japan. I had it bookmarked for their position on the previous year's tsukemen ranking in the TRY magazine. I was very surprised when I walked into this shop because it was so spacious despite being located in a fairly fancy area. It even has a waiting room for you to chill until you hear your name called. Alright, on to the tsukemen. These in-house noods were amazing by themselves. I think I could eat them just with the umami-amped kombusui provided. With the noodles alone being so delicious already, the dipping broth scaled it up a notch. The chicken and dried fish broth layered with a decadent amount of chiyu will coat every strand of the noodles to deliver an elegant flavor explosion in your mouth. I think the toppings were pretty standard for a bowl of this kind, but they were well executed enough to not weigh the performance of the bowl down. I got too carried away by the beauty of these noodles to focus on the toppings tbh. Read morelocated in the heart of Tokyo, offers a ramen experience that seamlessly blends traditional flavors with modern amenities. The shop’s sleek, minimalist interior creates a serene atmosphere, and a standout feature is the air-conditioned waiting area—a rare and welcome convenience in Tokyo’s ramen scene.
The menu, though concise, is meticulously crafted. The special shoyu ramen is a highlight, with its deep, umami-rich broth and perfectly cooked noodles (softer than I thought as default). The chashu pork is a standout, tender and flavorful, practically melting in your mouth. The soft-boiled egg is another highlight, with its creamy, golden yolk adding a rich texture that perfectly complements the dish.
Robinson’s attention to detail is evident in every aspect of the meal, from the high-quality ingredients to the precise cooking techniques. The chefs clearly take great pride in their work, and it shows in the consistently excellent bowls they produce.
Service at Robinson is warm and attentive, ensuring a pleasant experience even for those not fluent in Japanese. The combination of a modern, comfortable setting with top-notch ramen makes Robinson Ramen a...
Read moreVery interesting ramen restaurant. Right off the street in front of Toranomon Business Tower.
At the entry is a book to sign in to be put in the queue. Next to the book is a ticket machine. Robison has a big waiting room so no need to line up outside unless it’s really busy.
I arrived about 11:15 on a Thursday and waited about 20 minutes in the waiting room and then another 5 or 10 at the counter for my bowl.
Ramen was good but soup a bit salty for me. The wontons were very good. Will try the...
