The tsumami (small plates) highlight the natural flavors of top-quality ingredients — the signature katsuo with onion sauce is a consistent favorite, always full of depth and umami. The nigiri strikes an exceptional balance between shari (rice) and neta (topping), with each piece carefully selected by the chef. You can truly feel the intention and experience behind every bite. 恵比寿の東口から歩いたら15分くらい。白金台方向に奥まったところにあるお寿司屋さん。 この近くにある人気のお寿司屋さんの大将がここの出身。 平日の夜に予約して伺いました。 予約は結構取りやすいと思います。開始時間もとくに決められておらず自由度高いです。 店内はL字型のカウンター席と個室が多分一つかな。 割とこぢんまりとしていて綺麗だけどどこか町寿司のような落ち着きのある空間です。 コースは多分大体2万円弱くらい。 コースもリーズナブルだし、お酒が安い印象でした。 まず1品料理が9品と、その後握りが12カン、ウニの小丼、巻き、玉 という内容です。1品料理の中の1つだけ握りの間に出てきた。 つまみの切りつけもしっかり分厚いし、品数考えたらかなりリーズナブルだと思います。 しかもどれもしっかり美味しかった。 つまみで鯨も食べられました。 つまみシンプルなのが多いけどかなり好きだった。のれそれが個人的ヒット。 握りは形が特徴的で丸いシャリじゃなくて大将が握った形というかなんというかそんな形。 ほぐれが良くて適度に硬さのあるお米。お酢はそんなに強くなくてコクのあるタイプですね。 全体的にネタは大きいですがシャリは小さめなのでシャリの主張少なめです。 個人的にはもうちょいシャリ感あっても良いかな？ お酒たくさん飲む人はもっと楽しめる気がする。 大将も女将さんも豪快で優しい人たちで良いお店でした。
